Moog Dal Pakon Pitha

For the Syrup
2 cup sugar
1 1/2 cup water 
1 small piece cinnamon
2 cardamom
In a vessel, add all the above ingredients and let it simmer. The syrup has to 2 string consistency. Switch off the flame and keep it aside. 

Moog Dal Pakon Pitha
1/2 cup Moong dal 
1 cup Rice Flour
1 pinch Salt
1 tbsp Oil
2 cups Water
Oil for deep frying

Boil the Moog Dal with 2 cups of water. Add salt, 1 tbsp oil and rice flour and cook the on slow flame till it forms a dough. Cool the dough and place the dough on the platform and knead it well. Once the dough is ready, coat the rolling surface with a little oil to prevent it from sticking. Roll the dough to about a 1/2  inch thickness, apply oil and water on the rolled sheet and cut into shapes. 
You may use cookie cutters to cut them and make designs on them or use anything from knives to tooth picks to fondant tools. 
Heat oil to deep fry the pithas. Fry the decorated pieces until golden color and remove them from the oil. Ensure that all the oil has been drained from the pieces and place them directly in the hot syrup. Pakon pitha is ready to be serverd.
