Perfectly Baked home made Bread for Sandwich.....
Bread
1/2 cup wheat flour
2 cups Maida
1/2 tsp salt to taste
1/2 cup Luke warm water
1 tbsp sugar
1 1/2 tbsp yeast
1/2 cup water if required
2 tbsp oil
Method
Take a mixing bowl. Add sugar, luke warm water, yeast and wheat flour. Wait till the yeast rises. Add Maida and salt. Mix the flour to make a soft dough. If more water is required add it to the flour. Add 1 tbsp oil and knead the dough for 5 minutes. Keep the dough covered till it rises. Grease a bread tin. Once the dough rises, punch the dough and knead it again. Roll the dough and put it in the tin. Let it rise . Apply milk and butter on top of the dough. Bake it for 20 minutes at 200 degrees. Cool the bread completely before cutting.

Donuts

Donuts
For kneading dough
Ingredients
Maida - 2 cup
Luke warm milk as much as required to make soft dough
1 1/2  tsp dry yeast
1/2 tsp baking powder
1/4 cup butter
1 tbsp sugar
Salt - ½ tsp
Oil - for frying oil

For glazing donuts:
Ingredients
Powdered sugar - ¼ cup
Brown chocolate - 100 grams
White chocolate - 100
Colourful sprinkles and stars

Method
Add yeast, sugar and 1/2 cup lukewarm milk and keep it aside till it rises. Take flour in any big utensil add salt, baking powder and butter. Mix in yeast and milk as much required to make a dough and knead the dough. Keep kneading the dough for 5-7 minutes so that it gets soft. Roll the dough giving it a round shape. Spread some dry flour on the board and place dough on it. With help of rolling pin make a round circle with ½- ¾ cm thickness and cut round doughnuts with help of a donut cutter. Make doughnuts from rest of the dough again in similar manner. Keep the doughnuts on a greased tray. Brush all prepared doughnuts with oil so that they don’t get dried.
Cover the doughnuts and keep them aside till they become double in size. After 2 hours take oil in a pan and place it on flame for heating. Gently place 2-3 or as many doughnuts as many as possible in medium hot oil. Fry on low flame until they turn golden brown in color. Take out fried doughnuts in a plate with absorbent paper. Fry all doughnuts like wise. Dust piping hot doughnuts with powdered sugar.

How to glaze the doughnuts:
Melt brown and white chocolate. Dip some doughnuts with white chocolate and rest with brown chocolate.
Make a cone filled with brown chocolate and make line on the white chocolate doughnuts for garnishing and make white chocolate cone for garnishing the brown chocolate doughnuts. Sprinkle some colourful sprinkles on some doughnuts.

Home made Tomato Ketchup

Home made Tomato Ketchup
Ingredients
2 1/2 kg Tomatoes
6 Garlic cloves
1 cup Light Corn syrup 
1/2 cup White Vinegar
1 cup Water from the boiled tomatoes
4 Cloves
1 stick Cinnamon
1/2 cup Sugar or more as per the sweetness required 
Salt to taste

Method
Add  the tomatoes, cinnamon,cloves and garlic in 1 1/2 cup hot water and boil for few minutes till the tomato skin has  ruptured. Take the tomatoes and garlic cloves out. Retain 1 cup  water from the tomatoes.  Peel the tomatoes. Blend the tomatoes and garlic cloves in a blender. Strain the tomato purée. Take a pot.  Combine all the ingredients over medium heat. Whisk until smooth. When mixture comes to a boil, reduce heat and simmer. Stir it often. The tomato purée will reduce to 1/2 the quantity.  The tomato ketchup will give a glossy look and will be thick. To check, dip a spoon in the ketchup and it will stick to the spoon. Remove the pot from heat and cool. Store in the bottles and refrigerate.

Laksa with Indian Kitchen Ingredients....

Laksa paste
Ingredients 
8 small dried Red chillies 
2 tbsp Dried Shrimp 
1 Onion chopped 
1 tbsp finely chopped ginger
3 Garlic cloves chopped
2 Lemongrass stalks chopped
8 Almond chopped
2 tsp Coriander leaves 
1 tsp Cumin seeds
1 tsp Turmeric paste
Method
To make laksa paste, place chillies and dry shrimp in two separate bowls and cover both with enough boiling water to cover. Leave for 20 minutes or until softened. Drain well, then process with remaining ingredients in a food processor to a smooth paste.


Laksa 
Ingredients
3 tbsp Oil
2 cups Chicken stock
1 tbsp grated Palm Jaggary
Salt to taste
12 Prawns
1/2 cup Chicken pieces
2 cups Coconut Milk
1/2 cup Soya Chunks boiled and fried
1/2 cup Beansprouts
1 packet Rice noodles 
1 Onion sliced and fried  

Granishing
Lime wedges, to serve
2 Boiled Egg sliced 
2 tbsp Chopped Green Chilies 
2 tbsp Fried Onions 
2 tbsp Mint leaves 
1 tbs Coriander leaves
Method 
Heat oil in a large saucepan over medium heat. Add laksa paste and cook, stirring, for 2 minutes. Add stock and sugar. Stir to combine, then bring to a simmer. Add chicken and simmer till the chicken is cooked. Add prawns and cook for 2 minutes. Add coconut milk soya chunks and beansprouts. Stir gently to combine, then bring almost to a simmer. Reduce heat to low and cook for 2 minutes. Meanwhile, place noodles in a large bowl. Pour over enough boiling water to cover the noodles. Then stand for 2 minutes or until soft. Drain the noodles. Take a bowl, then add laksa in a bowl. Add noodles. Add fried onions, green chillies, coriander leaves and mint leaves. Serve immediately with lime wedges and boiled egg slices.

Home made Tandoori Roti

Ingredients

3 cups Whole wheat

1 tbsp  Oil

1 cup Curd  + more  to make a dough

1/2 tsp Sugar

1 cup of water to apply on the dough

Ghee to apply on the Roti

Method

Take a mixing bowl. Add flour, salt, sugar  and oil. Mix it all the ingredients together. Add beaten curd and knead to make a dough.  Cover the dough for 30 minutes and keep. Make equal size big  balls from the dough.  Sprinkle wheat flour on the dough.Heat an iron tawa.  Take a ball and lightly flatten it into a circle dust some whole wheat flour and roll out into a slightly thick circle.Brush water on one side of the flattened dough. Put the watered side on the hot tawa or pan, raise the heat to high and let it stay for a few seconds. Turn the tawa upside down since the dough is sticked to the tawa it will not fall down and we can cook the other side over the flame decrease and increase the flame as needed tilting and moving the tawa.Until the other side is cooked. Put the tawa back on the flame, for another minute decrease or increase flame as needed, so that the other side will get cooked....once done, remove from the tawa.Brush ghee on top.
