Achari Sattu ki Puri...


Most of the time oil and the masala from the pickle remains back. This comes to me quite handy when I want to make a quick spicy dish. Just add some spoons of it to the vegetable or meat or fish and it gives a achari flavour to it. Today I have made Achari Sattu Ki Puri using this achar masala. This Puri is quite flavourful and can be eaten with a cup of tea or accompanied with some potato bhaji. 
Ingredients 
1 cup Sattu 
2 1/2  cups All Purpose Flour 
4 tbsp leftover Oil and Masala from any Achar / Pickle
1/2 tsp Carom seeds 
1/2 tsp Turmeric powder
Salt to taste 
Oil to deep fry the puris 

Method 
Take a mixing bowl. Add the Sattu, All purpose flour, salt, turmeric powder, carom seeds and 3 tbsp of left over achar masala. Mix all the ingredients together well. Add water little at a time to get a semi hard dough. Knead it well. Add the remaining achar masala, knead it for 2 minutes more. Cover and keep it aside for 15 minutes. Make lime size equal portions. Heat the oil for frying the puris. Take a portion, apply little oil on the rolling board. Roll out the dough in to round shape disc. Fry the puri until golden brown on both the sides. Remove it on an absorbent paper. Repeat the process with the remaining portions. Serve it hot with aloo tarkari.

Carrot and Beetroot Bread....


This bread is an experiment in my kitchen. I have used whole wheat flour, all purpose flour and semolina to make this bread. This bread is good for making sandwiches or you can just eat it with cheese spread. It has a mild flavour of garlic and rosemary. It is soft in texture. It Is good for children as it has veggies too.  Please do give it a try. 
Ingredients 
350 grams Whole Wheat Flour 
250 grams All Purpose Flour 
100 grams Semolina 
1 small Carrot grated 
1 small Beetroot grated 
Few Fresh Rose Mary leaves 
2 Garlic Clove grated 
2 1/4 tsp Dry Yeast 
2 tbsp Sugar 
1 tbsp Rock Salt 
1/2 tsp Chilli flakes 
150 Ml Lukewarm Water 
250 Ml Water 
2 1/2 tbsp Olive oil 

Method 
Take lukewarm water in a cup and add sugar and yeast. Stir and leave it to rise. Take whole wheat flour, all purpose flour and semolina in a mixing bowl. Add salt and chilli flakes. Mix all the ingredients together. Add the carrot, beetroot,  garlic and rosemary. Mix it together. Add the yeast water, water and 1 tbsp olive oil in the mixing bowl. Mix it and start kneading the dough. Knead it for 5 minutes. Add a tbsp of oil and continue kneading it for 10 minutes more. Take a portion of the dough and try stretching it. If it stretches, then the kneading is done. Transfer it into a greased bowl, cover and let it rise double in size. Punch the dough and knead it for a minute. Apply oil on your palms while handling the dough. Divide the dough into 2 equal portions. Take 2 greased medium size bread loaf tins. Take a protion and shape up the dough to fit it into one bread loaf tin. Repeat the same process for the other dough. Cover and let it rise double in size. Spray the dough with water. Bake it in a pre heated oven at 190 degrees celcius for 30 - 35 minutes. In between while baking, spray the bread with water.  Remove it from the oven, brush the top with butter. Let it cool a bit. Remove the bread from the mould. Cool it completely on a cooling rack before slicing.

Egg - Tuna and Veggie Sandwich....


My daughter is a very picky eater. She avoids most of the vegetables, not because she does not like them but she just forms an opinion about the taste in her mind, where as she does not even know the taste of it. When I had served her this sandwich, she ate not one but three slices of it. After she finished eating, I told her that she ate mushrooms, the vegetable she hates the most. This is the story in most houses with kids. 
This sandwich is a complete meal filled with eggs, fish and vegetables. I have used canned tuna, but even fresh boiled tuna can be used. I prefer making bread at home, but try to use fresh bread bought the same day from the store. 
This can be served for breakfast, with evening cup of tea or even for dinner with a bowl of soup. 

Ingredients
1 Loaf of Brown or White Bread slices 
4 Eggs
1/2 canned Tuna 
1 small size Onion chopped 
2 Green Chillies chopped
1/4 cup of Red and Yellow Capsicum chopped 
2 tbsp Sweet Corn
2 big Garlic cloves chopped
1 or 2 big size Mushroom chopped
Few Spinach leaves chopped 
2 tbsp Cheddar Cheese 
2 tbsp Butter 
Salt to taste 
1/4 tsp Pepper powder
P. S. Grated carrots and beetroot can also be added. 

Method
To make the filling for the sandwich, take a pan, add the butter and let it melt. Add garlic, chillies and onion. Sauté it till translucent. Add the capsicum. Stir and cook it for a minute. Add the corn and mushroom, stir it for another minute. Add the spinach and stir it for another minute. Break the eggs and add it in the pan, sprinkle salt and pepper powder. Stir the eggs until it is cooked. Add the cheese and the canned tuna. Stir it and remove it from the flame. Let it cool a bit. Take 2 slices of bread. Take 2 to 3 tbsp of the filling and spread it on one slice of the bread. Cover the filling with another slice of bread. Cut it into triangle. Repeat the process with the remaining bread. Serve it with hot cup of tea or a bowl of hot soup.

Green Herbs and Chia Seed Bread Roll...
  I love the nutty flavor and the crunchiness of the Chia. I have made these bread rolls with mint, coriander and green chillies chopped with a tbsp of Chia in it. You can add any fresh herbs of your choice. 
Ingredients
300 grams Whole Wheat Flour
200 grams All Purpose Flour
Salt to taste
1 tbsp Sugar
1 tbsp Chia seeds
11 grams Dry Yeast
150 ml Lukewarm Water
250 ml Water
2 1/2 tbsp Olive Oil
2 tbsp Coriander leaves chopped
1 tbsp Mint leaves chopped
2 Green Chillies finely chopped


Method
Take lukewarm water, sugar and yeast in a  cup. Whisk is well till the sugar dissolves. Keep it aside for it to rise. Take both the flour in a mixing bowl. Mix it together. Add coriander leaves, mint leaves, salt and chia seeds. Mix it once more. Make a well in the centre of the flour, pour in 1 tbsp oil, yeast water and 250 ml of water. With  a wooden spoon combine the flour together. Remove the wooden spoon and start kneading the dough. Knead for 2 minutes. Add 1/2 tbsp oil. Knead for 5 minutes. Keep the dough on a flat surface. Stretch the dough and knead it. If the dough is sticking to your skin, just spray oil on your palms. Knead for 5 minutes more. Apply oil on the dough, cover the dough and let it rise. 
Once the dough has risen, punch it down and knead it for a minute. Divide the dough into 6 equal portions (approximately 152 grams). Grease a baking tray. Take a portion.  You can either sprinkle little dough or apply little oil on your palms so that the dough does not stick. Flatten the dough on a flat surface, fold in 1/2 inch of the dough vertically from each sides. Press the folded edge properly. Now roll in the dough from the top till the centre and similarly roll in the rest of the dough from the bottom to the centre. The 2 edges of the dough will come together. Press and seal the edges. Give a light roll to the dough to get the shape of the bread roll bun. Gently pick the roll up and place it on a greased baking tray. Place the seal edges downwards. Repeat the process with other remaining dough. Cover and let it rise. Once risen, spray water on the bread rolls. Sprinkle chia seeds on top. Bake it for 25 minutes at 190 degrees celcius in a preheated oven. To get uniform colour, after 15 minutes, rotate the tray). Once baked, remove the tray and cool the bread roll down before using it. Best is to bake it in the night for the morning breakfast.

Burger Pizzas and Handmade Flat Bread Pizza... 

I call it "Quick Fix Pizza"... 
When my friend called me, it was 7:30 pm in the evening. Uncle (her father) wanted to visit us. I had already planned to invite him over dinner, so then I decided why not today itself... My initial though was to order food from out, but my friend said that since children wanted to have Pizza Burger, we would order the burger pizzas from out, but from the time I have started baking, I hate to order pizzas from out... But to make the Burger Pizzas, first I have to bake the burger buns and then make the pizza.. It was already 8:30 pm.
 So tried some tricks to save some time on baking the burger bread and then to make the pizza burgers on time for the children to enjoy. I did save some time, but for the children to enjoy was bit delayed... 
    Let's see how to proof the bread dough in a warm oven to save the time for baking, especially when the kneading time is also reduced. 
You need a warm place for the yeast to rise quickly when you are lacking time... This method some what solves the problem.
Let's see the recipe......
Since I made Vegetarian Pizza burger and Pizza, I used lots of vegetables cut into small cubes..... 
Onion, Green - Yellow - Red Capsicums, Mushrooms, Baby Corns, Green - Black Olives, Pickled Red Chilli sliced, Pickled Gherkins and Tomatoes too. (Which I missed)
1 block of Pizza Cheese or 50:50 Cheddar Cheese and Mozzarella Cheese 
Pizza sauce 
Sprinkle of Dry Oregano and Chilli flakes.. 
2 tbsp Milk, 1 tbsp Oil and 1/2 tsp Honey for the wash
(Keep all the above ingredients ready while proofing the bread.)

For a Quick Pizza Sauce.....
Ingredients
6 Ripe Tomatoes cut into cubes 
6 big size Garlic pod chopped
1 big size Onion chopped 
Salt to taste
2 tbsp Sugar
1 tsp Dry Mix Herbs or Fresh Basil Leaves chopped 
1 tsp Pepper powder 
1 cup Tomato purée
2 tbsp Olive oil
Method
In a wok, add olive oil. Add garlic and sauté for a minute, add the onions. Sauté till translucent. Add the tomatoes, stir and cook it for 5 minutes. Add the tomato purée, salt, pepper powder, sugar and mix herbs, stir and let it simmer for 5 minutes more. Keep it aside.
For the Burger Buns.....

Ingredients 
500 grams Flour ( Whole Wheat + All Purpose Flour ) 
                                      60          :           40 
2  and 1/4 tsp Dry Yeast or 1 Dry Yeast Sachet  
1/2 cup + 1 1/4 cups Luke Warm water 
2 tbsp Sugar 
Salt to taste
3 tbsp Olive oil 
Sprinkle of Dry Oregano (optional) 
Method 
Take a mixing bowl. Add the flour and salt and mix it. Take 1/2 cup lukewarm water, add sugar and mix it. Add the yeast, stir and dissolve the yeast in the water and let it stand for 10 minutes to rise. 
( This is the first step... Very very important... The yeast has to rise. )
Make a well in between the centre of the flour. Add the yeast water, 1 1/4 cup water and 1tbsp of oil in the centre of the flour. Mix it with a wooden spoon. Lightly knead it for 2 minutes. The dough is bit sticky at this stage.. ( if you feel the dough is very sticky, then sprinkle some flour and knead it. ) Add 1/2 tbsp oil and continue kneading for minute. Add 1/2 tbsp oil again and continue kneading for another minute. 
( Instead of 10 minutes, I kneaded it for just 4 minutes. Saved 6 minutes.) 
Now apply the remaining oil on the dough, cover the bowl, wrap the bowl with a napkin and keep it in the oven at 60 to 70 degrees Celsius.. (The oven has to be warm and not hot.) keep an eye on the bowl. After 3 to 4 minutes please feel the bowl.. If it has become hot.. Remove it from the oven and keep it out till it cools down. Keep it back in the oven. In 30 to 40 minutes the dough will rise. 
 ( Saves almost 30 minutes of stage 1 proofing time ) 
Remove the bowl from the oven. Punch the dough and knead it for a minute. Make 9 equal portions of the dough ( 100 grams of each portion ) the remaining dough would be made into hand made flat bread Pizza.. Grease a baking tray. Take a portion, to make the burger bun, push the dough from in between the thumb and index finger. It will form a ball. Now gently roll the ball with the help of the palms. Place the rolled dough on the baking tray. With the help of the fingers, lightly flatten the ball. Repeat the process. Keep the dough balls at a distance from one another. Cover it with a napkin and keep it in the oven for 20 minutes for rising at 60 to 70 degrees celcius. Now take the tray out of the oven, remove the napkin. Increase the oven temperature to 190 degrees celcius. Keep the oven for preheating. Meanwhile apply the milk wash on the buns. Sprinkle dry oregano on the buns (optional). Bake the buns for 10 minutes. Remove and apply another milk wash. Bake for another 10 minutes. Remove again and apply the last milk wash. Bake for 5 to 10 minutes more until brown in colour. Remove it out from the oven. Brush in oil on the buns. Remove the buns from the tray and cool it.
To make the Hand made Flat Bread Pizza........
In between baking the buns.. Grease another baking tray. Take the remain dough, stretch it with your palms and spread the dough uniformly on the tray and cover up the tray completely. Grate the cheese over the dough. Apply the pizza sauce. Arrange all the cubed vegetables, olives and pickled vegetables. Put some more grated cheese on top. As the buns are ready, increase the oven temperature to 200 degrees celcius and bake the pizza for 25 minutes until the cheese has melted and the edges of the bread has become brown. Take it out from the oven and keep it for 10 minutes before cutting the pizza.
To make the Burger Pizza......
Take the burger buns and cut the buns horizontally. Take a baking tray. Place the lower portion of the buns on the tray. Put the grated cheese, then put a tbsp of the pizza sauce, put the all the vegetables one after the other. Finally put some more grated cheese. Bake the buns at 190 degrees celcius for 10 minutes or  till the cheese has melted. Take the. Tray out from the oven, place the top portion of the buns on the cheese. Put the tray back into the oven and back it for 10 minutes more. Remove the tray and serve it hot.....

The name challah may originally have indicated roundness ("circle") and then also came to denote hollowness ("space") or vice versa. The bread was originally called Yachov in Hebrew, since it was baked in the form of a round loaf. It is also now known as cholla bread. Yiddish communities in different regions of Europe called the bread khale, berkhes or barches, bukhte, dacher, kitke, koylatch or koilitsh, or shtritsl. Some of these names are still in use today, such as kitke in South Africa. Most traditional Ashkenazi challah recipes use numerous eggs, fine white flour, water, sugar, yeast, and salt, but "water challah" made without eggs also exists. Modern recipes may replace white flour with whole wheat and oat or sugar with honey or molasses. Among Sephardic Jews, water challah is preferred for ritual purposes because Sephardic minhag does not require the Mitzvah of Challah if the dough contains eggs or sugar. While breads very similar to Ashkenazi egg challah are found in Sephardic cuisine, they are typically not referred to as challah but considered variants of regional breads like çörek, that are eaten by Jews and non-Jews alike.
Egg challot sometimes also contain raisins and/or saffron. After the first rising, the dough is rolled into rope-shaped pieces which are braided, though local (hands in Lithuania, fish or hands in Tunisia) and seasonal (round, sometimes with a bird's head in the center) varieties also exist. Poppy or sesame (Ashkenazi) and anise or sesame (Sephardic) seeds may be added to the dough or sprinkled on top. Both egg and water challah are usually brushed with an egg wash before baking to add a golden sheen. According to Jewish tradition, the three Sabbath meals (Friday night, Saturday lunch, and Saturday late afternoon) and two holiday meals (one at night and lunch the following day) each begin with two complete loaves of bread. This "double loaf" commemorates the manna that fell from the heavens when the Israelites wandered in the desert for forty years after the Exodus from Egypt according to Jewish religious belief. The manna did not fall on Sabbath or holidays; instead, a double portion would fall the day before the holiday or sabbath. Each single loaf is sometimes woven with six strands. Together, both loaves have twelve which is associated with the 12 Loaves of the Showbread offering which was displayed in the Holy Temple (in Jerusalem)- on the "Table", each loaf represent a tribe of Israel. Other numbers of strands commonly used are three, five and seven. Occasionally twelve are used, referred to as a "Twelve Tribes" challah.

Here I have replaced water with milk. 
Ingredients
3 1/2 cups All Purpose Flour
1/4 cup + 1 tbsp Sugar
3/4 cup Lukewarm Milk 
1 tsp Dry Yeast
Salt to taste 
2 Eggs, beaten
1/4 cup Oil
Egg wash (1 Egg + 1 tbsp Water)
1 tbsp Sesame seeds

Method
Mix the yeast and 1 tbsp of sugar in the lukewarm water. Keep it aside until it rises. Add the eggs in the yeast water and mix it thoroughly. In a large mixing bowl, add the remaining 1/4 cup sugar, flour, and salt. Mix it with a wooden spoon and pour in the yeast mixture and oil. Stir until the dough starts to come together, then knead for 10 minutes, or until the dough is soft and stretchable. Sprinkle some flour and apply some oil on the palm as the dough may be little sticky while kneading. Let it rise in a warm place until doubled in size. Grease a baking sheet. Take the dough, punch it. Knead it for 2 minutes. Divide the dough into 6 portions. Weight each portion, so it is divided equally approximately 125 grams. Take a portion and roll it into a long rope.  Repeat it with the other portions. Arrange the dough ropes in a line. Pinch the top of the ropes together and start braiding the ropes together. As the braiding is done, pinch the end so that it does not open up. Place it on the baking sheet, cover, and let it rise. As the dough is rising, preheat the oven to 180 degrees celcius. Brush with the egg wash. Sprinkle sesame seeds and bake for 30- 35 minutes, or until the challah is golden brown.

Moroccan Bread (Khobz)

Moroccan Bread (Khobz)
It's a flat bread and made in every household and is had with soups, vegetables and gravy dishes. It can be made with All Purpose Flour or Whole Wheat Flour and Semolina. Very easy to make and healthy too when made at home. 

Moroccan Bread 
Ingredients 
2 1/2 cups Whole Wheat Flour
1/2 cup Fine Semolina 
1 cup  + 1/4 cup Lukewarm Water
2 tsp  Dry Yeast
2 tsp Honey
1 tbsp Sesame seeds roasted 
Salt to taste 
4 tbsp Olive oil

Method 
Combine 1/2 cup warm water, yeast, honey in a cup. Let it stand till it rises. Take a mixing bowl. Add the flour, semolina and salt. Mix it together. Add yeast mixture, 2 tablespoons oil and 1/2 cup of lukewarm water. Mix it. If required add the rest of the water little at a time and form a soft dough. Turn the dough out on a flat surface. Apply oil in between kneading on the palms and knead the dough for 10 minutes or until smooth. Grease a baking tray. Divide dough into 2 equal portions.  Knead for a minute. Roll each piece of dough into a round thick disc. Place it on the tray. Sprinkle sesame seeds. Press it lightly. Cover the tray and let it stand 40 minutes. Preheat the oven to 200 degrees Celsius. Bake for 15 minutes. Take the tray out of  the oven and drizzle rest of the remaining oil on top of the breads. Put the tray back in the oven and back for another 10 minutes or until golden brown on top.  Take it out of the oven and serve warm.

Pita Bread

 Pita Bread
It is a Lebanese bread had with Hummus, Salad and Falafel... it's better to make these at home. Easy to make even if you don't have a oven.
Ingredients
2 1/2 + 2 tbsp  cup All Purpose Flour 
2 tsp Dry or Instant Yeast
1 tsp Sugar
Salt to taste
1/2 cup Lukewarm water + More water as required 
2 tbsp Olive oil

Method
Add yeast, sugar and water in a bowl and let it proof for 10 minutes. Add 2 1/2 cups of the flour and salt and mix it well. When the yeast is ready pour the yeast on the flour. Mix the dough well. If required add more water little at a time and start mixing the flour and kneading it into a soft dough. Add a tbsp olive oil and knead it for 5 minutes. Drizzle some more oil on the dough. Cover the bowl with a towel and let rest until it rises double its size. When the dough is ready, sprinkle some flour on the dough and remove the air from the dough.  Knead it again for few seconds and make 6 equal portions of the dough. Arrange the balls on a greased tray leaving some distance, cover and let it rest for 10 minutes. With a help of a rolling pin roll out each ball into a 1/3 inch thick circle. Let the dough circles rest for 10 minutes.

To Bake Pitas in the Oven...
While rolling the dough,heat the oven to 260 degrees celsius and preheat it. Put a baking tray on the middle rack to heat. Put as many rolled out pitas that fits on the baking directly for about 3 minutes. The pita will start to puff up after two minutes and is done when it has fully ballooned. Cover baked pitas with a towel while cooking any remaining pitas.

To Bake Pitas on the Stovetop...
Warm a cast iron skillet over medium-high heat. Drizzle a little oil in the pan and wipe off the excess. Put the rolled-out pita on the skillet and bake until you see bubbles starting to form. Flip and cook for 1-2 minutes on the other side, press the surface gently with a towel. Flip again and cook another 1-2 minutes.  The pita should start to puff.  Keep cooked pitas covered with a clean dishtowel while cooking the remaining pitas.

Palak Paneer Stuffed Paratha

This paratha is good for children who refuses to eat green leafy vegetables. This can be eaten with curd and pickles.
Ingredients
4 cups of Whole Wheat Flour
1 bowl Spinach Purée
1 tsp Ginger Chilli paste
1 tbsp Mint chopped
2 Green chillies chopped
1 bowl of grated Cottage cheese
1/2 cup Curd beaten
1/2 tsp Turmeric powder
1 tsp Cumin powder
1/2 tsp Garam masala powder
1/2 tsp Curry powder
1/2 tsp Chilli powder
1/4 tsp Cumin powder for stuffing
Salt to taste
Ghee to fry the Parathas

Method
Take a mixing bowl. Add the flour, spices, salt and oil. Mix it well. Add curd and spinach purée. Mix it, add water as required and start kneading into a dough. Knead the dough for 5 minutes, cover and keep it aside for 15 minutes. Take the grated cottage cheese, add salt, cumin powder, chopped chillies and mint leaves. Mix it. Divide the dough into lemon size balls. Take a ball. Flatten it. Fill a tbsp of the stuffing. Seal the dough from the edges. Coat the dough with dry flour. Roll it. Heat a skillet up. Place the rolled dough on the skillet. Cook the paratha on both the sides for 2 minutes until bubbles appear.  Apply ghee and fry the paratha... Serve it hot..

Bread making is so... so.. therapeutic. Plus home made breads are healthy too. When ever I am down.. bread making has boosted up my energy. I love using my hands for kneading. It is easy too. Once you have the techniques of making basic bread.. you can innovative your own breads...

 

Ingredients
4 cups Whole Wheat Flour
2 tbsp Dry Yeast
1 tbsp Sugar
1/4 cup of Lukewarm Water
1 cup Lukewarm Milk
1 tsp Garlic Seasoning
Salt to taste
1 Egg (Optional)
2 Potatoes peeled, grated and excess water squeezed out
1 cup Cheddar Cheese
2 tbsp Butter
1/2 cup Melted Butter
1/2 cup Mozzarella and Cheddar cheese mix
Egg wash or 
Butter and Milk wash

Method
Take 1/4 cup lukewarm water, add sugar. Stir it, add yeast. Stir it and keep it aside to rise. Take a mixing bowl. Add flour, salt, garlic seasoning. Mix it. Make a well in the centre. Add yeast water, milk, egg, potatoes and cheese.  Mix it and start kneading the dough. Add extra water little at a time till it forms a soft dough. In the beginning it will be bit sticky.  Add a tbsp of butter and knead it. Take the remaining 1 tbsp of the butter little at a time and keep kneading for 10 minutes. Rub butter on the dough, cover and keep it to rise. Sprinkle little flour, punch and knead the dough.  Make lemon size equal balls. Grease a round baking tray. Dip the balls in the melted butter and arrange the balls in the baking tray. Cover and let it rise for 30 minutes. Apply egg wash on the dough.  Bake it at 180 degrees celcius for 15 minutes in a preheated oven. Take it out from the oven. Sprinkle mozzarella and cheddar cheese. Sprinkle some seasoning too. Bake it for another 10 minutes. Once done remove it from the oven. Cool a bit... Have it with any dips...

Eggless Fruity Nutty Sweet Bread Loaf....
Using Tangzhong made from Custard powder... 


Normally “tangzhong” or “water roux,” is made mixing water and flour, some times milk is also used instead of water. It is cooked and stirred until it forms a paste. Then, this paste is removed from the heat and allowed to cool, and added to the flour and yeast. By doing so it enhances and improves the texture and moisture in the bread. It stays soft and fluffy. 
Here I have used custard powder instead of flour and milk instead of water and added vanilla essence and sugar. The bread has turned out to be soft and has a rich and enhanced taste. 
This is an experimental recipe from my kitchen.


For the Custard Tangzhong
Ingredients
4 tbsp Vanilla Custard Powder
1 1/4 cup Milk
1/2 cup Sugar
1 tsp Vanilla essence

Method
Take a pan, add a cup of milk, on low flame let it simmer. Take the remaining milk in a cup. Add the custard powder and mix it. Add sugar to the simmering milk. Stir it till the sugar dissolves. Add the custard paste to the milk, stirring it continuously cook it till it thickens. Add the essence, stir and switch off the flame. Stir the mixture till it cools downs a bit. Keep it aside till it cools down completely. 


For the Bread
Ingredients
3 cups of All Purpose Flour
3 cups Whole Wheat Flour
1/2 cup lukewarm Milk
2 tbsp Dry Yeast
1 tbsp Sugar
Salt to taste
Custard Tangzhong
Few dried Cranberries
Few Raisins
Few dried Blue Berries
Few Broken Cashewnuts
Few Almond Flakes
2 tbsp Butter
1/2 tbsp Butter + 1/2 tbsp Milk for Brushing

Method
Take the yeast in a cup. Add sugar and lukewarm milk. Stir it and keep it aside to rise. Take a mixing bowl. Add the flours (keeping 1 cup flour aside) and salt. Mix it. Make a well. Add the yeast water and the custard. Mix all the ingredients together to form a dough. The dough will be sticky so add little of the remaining flour while kneading the dough. Knead it for 5 minutes. Add a tbsp of butter and knead it well for 5 minutes more. Grease the dough. Cover and keep it till it rises double in size. Once it is double in size, sprinkle with some flour and punch and knead the dough. Add the dry fruits  (cranberries, raisins, cashewnut and almond). Mix it with the dough. Take a bread loaf pan. Grease it. Shape the dough and place it in the pan. Keep it aside till it rises again. Brush the loaf with butter and milk wash.   Bake it at 180 degrees celcius for 25 to 30 minutes in a preheated oven. Take it out and cool it completely before cutting.

Turkish Flat Breads with Ground Meat and Vegetables....


For the Dough 
Ingredients
3 cups All Purpose Flour + Flour for dusting
1 1/2 tbsp Dried Yeast
1/2 tsp Sugar 
Salt to taste 
1 cup Lukewarm Water
3 tbsp Olive oil

Method 
Take half cup lukewarm water. Add yeast and sugar, stir it. Keep it aside to rise. Mix the flour and salt in a mixing bowl. Make a well in the centre, add 2 tbsp olive oil and yeast water. Gradually mix the flour and add the remaining water little at a time to make a dough. Knead the dough for 5 minutes. Add the remaining oil and knead it further. Cover and keep it aside till it rises double in size.

For the Topping
Ingredients 
1 bowl  ground Mutton
1 medium size Onion finely chopped
2 medium Tomatoes deseeded and diced
½ Green Capsicum  finely diced
Salt and Pepper to taste 
1 tbsp Lime juice 
1 tbsp Olive oil

Method 
Take a pan. Heat oil. Add onion and capsicum. Sauté it till it has become soft. Add the tomatoes. Sauté it for another 2 minutes. Add in the lemon juice,  salt and pepper. Turn the heat off. Add the ground meat to the cooked vegetables and mix it. 
Keep it aside.

To Assemble the Kiymali Pide
Ingredients 
Dough 
Topping 
1 egg beaten + 1 tbsp Olive oil mix to brush the Pide

Method 
Once the dough has risen, place the dough on a lightly floured surface. Knead the dough for a minute. On a lightly floured surface, roll the dough into oval shape, thickness of the dough should be 1/2 cm. Place the oval flat bread dough on a greased baking tray. Spread the filling evenly on the flat bread, leaving 2 cm at the edges as a border. Fold in the sides. Press the oval dough at each end to make it pointy. Brush the edges of dough with egg and oil mixture. Bake for 20 minutes at 200 degrees celcius in a preheated oven , until the pide is golden brown and crispy at the edges. Once cool, cut into slices and serve.
