Ram Rochak Tarkari


It’s a delicious Oriya vegetarian dish popular in the Baripada region of Odisha. This dish is made during Ratha Yatra. This a very simple dish. Mung dal dumplings are cooked with vegetables like brinjal and potatoes.  This dish can be served with rice.
This recipe is adapted from Sweta Biswal's blog Oriya Rasoi....


For the Dal Dumplings / Bara
Ingredients
1/2 cup Yellow Split Lentils(Mung Dal) soaked for 1 to 2 hours
1/4 cup Whole Green Gram (Whole Green Mung Dal) soaked for 4 to 5 hours
1/2 tsp Cumin seeds
2 Red Dry Chillies
A pinch of Asafetida
Salt to taste
Oil for fry the dumplings


Method
Add the cumin seeds, dry red chillies, asafetida, salt, yellow mung dal and green whole mung dal in a grinder. Add very little water as the batter should be thick. Grind the dal into a batter. Take oil in a wok and let it heat up. Add a tsp of the batter in the oil. Repeat the process for 3 to 4 times. Fry it till golden brown in colour. Remove it from the oil and keep it aside.

For the Masala Paste
Ingredients
2 to 3 small pieces of Ginger
2 Dry Red Chillies
1 small Green Chilli
1/2 tsp Cumin seeds
3/4 tsp Coriander seeds
1/2 tsp Turmeric powder


Method
Add the ginger, red chillies, green chilli, cumin seeds, coriander seeds and turmeric powder in the grinder and grind the ingredients. Add 2 to 3 tbsp water and grind it again into a paste.

For the Curry
Ingredients
Mung Dal Dumplings
1 cup Brinjal cut into medium cubes
2 medium size Potatoes cut into medium size cubes
1 Green Chilli slit
1 Green Cardamom
1 small piece Cinnamon
2 Cloves
Salt to taste
Masala paste
2 tbsp Oil
1/2 tsp Ghee


Method
Reduce the oil in which the dumplings had been fried to 2 tbsp. Add the cumin seeds, clove, cardamom, cinnamon and green chilli. Let it crackle. Add the masala paste. Sauté it till the oil leaves the masala. Add the potatoes. Stir and cook for a minute. Add the brinjal. Stir and cook for another minute. Add 1 1/2 cups of water. Stir, cover and cook for 10 minutes. Open the lid, add salt to taste. Stir, cover and continue to cook until the potatoes are 80 percent done. Open the lid, check if the potatoes are almost done. Add the dumplings and continue to cook for another 4 to 5 minutes. Drizzle ghee and switch of the flame. Serve it with hot steaming rice.

Manji Pulimuchi


Pulimuchi is a sour and spicy Mangaloren Style masala gravy dish cooked with fish or chicken.
The gravy can be dry or semi dry as per one’s choice. This is a finger licking dish that can be served with Rice or Neer dosa.
Here I have used Pomfrets.

For the Masala Paste
Ingredients
20 or more Red Guntur Chillies as per the spiciness required - Soaked in water for 30 minutes
2 Onions chopped
16 Garlic Cloves peeled
1 small Ginger chopped
1 Green Chilli
1 1/2 tsp Tamarind Paste
10 Pepper Corn
1 tsp Cumin seeds
1 tsp Coriander seeds
Salt to taste

Method
Grind the cumin, coriander and pepper till it is in powder form. Grind the onion, ginger, garlic, green chilli and 1/2 of the red chilli along the powder into a fine paste. Add the remaining red chillies, tamarind, salt and little water and grind the all ingredients together into a thick fine paste.

For the Pomfret Masala Gravy
Ingredients
4 medium size Pomfret marinated with Turmeric and Salt for 15 minutes
Few Curry Leaves
Masala Paste
1/2 cup Coconut Oil

Method
Take a flat pan. Add the oil and heat it. Add the masala paste, stir fry it for 2 minutes. Add the curry leaves. Continue to stir fry for another minute. Spread the masala on the pan. Place the pomfrets in the masala. Apply some of the masala on the top part of the pomfret too. Cover and let it cook for 5 minutes on a low flame. Remove the lid. Turn the pomfrets. Cover and cook the pomfrets father till the oil from the masala releases and the pomfrets are done. Serve the Pomfrets with Neer Dosa.

Phulkopir Roast


As winter approaches there are varieties of winter vegetables that comes in the market. Phulkopi / Cauliflower is one of  the winter vegetable that is one of my favorite. This vegetable is used to make various dishes. Phulkopir Roast is one of the vegetarian dish made with Cauliflower, as the name says it all.  This is an old Bengali dish made during occasions. Many of the restaurants in Kolkata serves this dish during Durga Puja. This is a very simple dish made without any garlic and onions. It can be served with rice or paratha or rotis. 

For the Masala Paste
Ingredients
1 tbsp Raisin soaked in 3 tbsp water
1 inch Ginger chopped
2 Green Chillies
1 tsp Coriander seeds
3/4 tsp Cumin seeds
3/4 tsp Kashmiri Chilli Powder
Method 
Add all the above ingredients in a grinder and add little more water. Grind all the ingredients into a fine paste. 

For the Cauliflower Roast
Ingredients
500 grams Cauliflower cut into medium size florets
Masala paste
Salt to taste
1 tsp Sugar 
2 Bay Leaves 
1/2 tsp Bengali Garam Masala (2 Cardomoms, 3 Cloves and 1 small stick Cinnamon ground into powder)
1/4 cup Curd
1/4 cup Mustard Oil
1 tbsp Ghee 

Method 
Take 1 liter water in a wok. When the water becomes hot, add 1 tsp salt and let it bubble. Switch of the flame. Add the Cauliflower and let it stand for 15 minutes. Drain the water out. Add mustard oil in the wok. Let it heat. Add the cauliflower and fry it till it’s colour changes. Remove the cauliflower from the oil. In the same oil add the bay leaves. Add the masala  paste and on a medium low flame, sauté the paste till the oil begins to separate from the paste. Add the curd and continue to cook. Add the sugar. Cook for 2 minutes. Add the cauliflower. Stir and cook for another 2 minutes. Add 1/4 cup water, cover and cook the cauliflower till done. Keep stirring it occasionally. Add little water and salt in between as the cauliflower takes time to cook. Once done add garam masala and ghee. Serve hot with rice or roti.

Gondhoraj Chicken Bhappa




‘Gondhoraj' in Bengali means the king of smell. It's a type of a lebu / lemon, which is aromatic and it is different in size, shape and taste. The smell is very refreshing and mesmerizing.
It is best had with Korai r Daal and Aloo Posto served with hot steaming rice. Now a days many different dishes are made using Gondhoraj Lebu.
The lemons, lemon leaves and Bhut  Jolokia used are from the plant growing in my house. 
Here I have made Chicken Bhappa my style with Gondhoraj Lebu and it's leaves. Since I used bhut jolokia, I didn't add green chilli paste as bhut joloki is very spicy. 



Ingredients 
1 kg Whole Chicken 
1 Onion sliced
3 Green Chillies slit 
2 Bhut Jolokia sliced lengthwise 
5 Gondhoraj Lemon leaves
4 to 6 wedges of Gondhoraj Lime 
Some Coriander Leaves for garnishing 
Paste of 1 medium size Onion, 1 small piece of Ginger and 5 Garlic 
Paste of 2 tbsp Coconut grated and 2 tbsp of Poppy seeds ground with 2 tbsp of Curd 
1 tbsp Juice of Gondhoraj Lebu 
Salt to taste 
1/4 cup + 1 tbsp Mustard Oil 


Method 
Take a whole chicken, after washing the chicken, wipe the chicken with a paper towel. Poke the chicken with a fork. Apply little salt on the chicken properly and keep it aside for 15 minutes. Now add the Onion - Ginger - Garlic paste. Rub it well on the chicken. Keep it aside for 15 minutes. Add the coconut - Poppy seed paste, lime juice, salt, 1/4 cup of oil, sliced onion, 2 green chillies, some slices of bhut jolokia and lemon wedges. Apply all the ingredients well on the chicken as well as in the inside part of the chicken, let it stand for an hour. Take a pressure cooker, place the chicken and its marinated juices into the pressure cooker. Pour in 1 tbsp of the mustard oil. Place the green chilli and the remaining slices of the bhut jolokia on top of the chicken. Cover the lid of the cooker. Let it cook on a low flame until 5 whistles. Let the pressure release. Garnish it with some coriander leaves. Serve it with hot steaming rice.

Fish Caldino / Caldin ( Mild Fish Curry )


It's a Goan dish. It's a mild yellowish colour curry which is served as a side dish. This curry can be made with any vegetables or fresh fish. Surmai, pomfret or prawns are used to make this curry.  The curry though mild, is quite flavorful.
This can be served with hot rice or pav.

To make the Caldin Juice
Ingredients
1 fresh Coconut grated
4 Garlic cloves
2 Cloves
1 small piece of Cinnamon
10 to 15 Black Pepper Corn
1 tsp Cumin seeds
1 tbsp Coriander Seeds
1/2 tsp Turmeric powder
1 tsp Tamarind Paste
2 cups of warm Water

Method
Blend all the above ingredients together in a blender along with the warm water.  Strain this through a strainer to get a thick Caldin juice. Add 1 cup of water to the residue and strain out a thin juice. Keep it aside.

For the Curry
Ingredients
3 medium Pomfret sliced and cleaned 
1 medium size Onion chopped 
1 medium size Tomato chopped 
1 tsp Ginger minced 
2 Green Chillies slit
1/4 tsp Sugar 
Salt to taste
2 tbsp Oil 

Method 
Take a wok, add oil. Let it heat. Add the chopped onions, sauté it till translucent. Add the chopped tomato, ginger and green chillies. Stir and cook for 2 minutes. Add the thin juice and let it simmer. Apply little salt on the fish. Add the fish into the wok. Let it simmer for a minute. Turn the fish. Add the thick juice and continue to simmer. Add the salt and sugar. Let it simmer till the fish is cooked. Serve hot with steamed rice or with pav.

Coorgi Koli Saaru / Coorgi Chicken Curry


 Koli Saaru is a delectable Chicken dish from the region of Coorg. The curry is made with freshly ground spices which enhances the flavor of the curry. It's simple to make. It's served as a side dish, it's eaten with Akki Roti or Rice. I have used pressure cooker to speed up the time, but you can also slow cook it in a pot. 

To Marinate the Chicken
Ingredients
750 grams Chicken pieces washed and cleaned
1 tsp Turmeric powder
1 tsp Chilli powder
Salt to taste


Method
Marinate the chicken with turmeric powder, chilli powder and salt for 1 hour.

For the Masala powder
Ingredients
1 tsp Mustard seeds
1 tsp Black Pepper corns
1 tbsp Coriander Seeds
1 tsp Cumin seeds
5 Cloves
1 medium stick Cinnamon

Method
Dry roast the mustard seeds, black pepper,coriander seeds and cumin seeds till a strong aroma releases. Cool it and grind them into a powder.

For the Wet Paste
1 Medium size  Onion chopped
1 Medium size Tomato chopped
6 Garlic Pods
1 Inch Ginger
2 Green Chillies
1/2 tsp Roasted Poppy seeds - I have not added
1/2 cup fresh or frozen grated Coconut

Method
In a grinder, grind the Onion, Tomato, Garlic, Ginger, Green Chillies and Coconut into a paste.

To make the Curry
Ingredients
Marinated Chicken
1 medium size Onion finely chopped
Few Curry Leaves
Wet Paste
1/2 tsp Kachampuli (Black Vinegar)
OR
1 tsp Tamarind paste
1 1/2 tbsp Dry Masala powder
Salt to taste 
3 Tbsp Oil

Method
Take a pressure cooker. Add oil, let the oil heat up, add the onion and curry leaves. Sauté on the onion medium heat for 2 minutes. Add the wet paste, stir it and cook for 3 minutes on a medium low heat. Add 1/4 cup water and continue to cook for 2 minutes more. Add the chicken pieces, stir and cook for a minute. Add the powder masala. Stir and cook for another 2 minutes. Add 1 1/2 cups of water. Stir for a minute. Cover the pressure cooker and allow 4 whistles. Switch off the flame and let the pressure release. Open the lid. Add salt and tamarind paste and stir the curry. Let it the curry simmer for another 2 minutes. Serve the Koli Saaru with Akki roti or Rice.

Shami Kabab...


Shami kebabs are popularly eaten as snack or appetizer throughout India, Bangladesh and Pakistan. It is made from beef, chicken or lamb. It is made by boiling the meat,dal, whole spices, onion, ginger and garlic, salt and turmeric powder till the meat has cooked. Then it is ground into a smooth paste. Coriander leaves, mint leaves and green chillies are added to the paste. It's given a shape of a patti and it's shallow fried in oil. 
It's garnished with onion,lime and mint leaves. It is served with green chutney made out of coriander and mint leaves.

Ingredients
250 grams boneless Mutton pieces
1/4 cup Split Bengal Grams / Chana dal soaked for an hour
1 Onion chopped
4 to 6 Garlic cloves
1 small piece of Ginger
2 to 3 or more Green Chillies chopped as per requirement 
2 tbsp Mint Leaves chopped
2 tbsp Coriander Leaves chopped
1 Black Cardomom
1 Green Cardomom
2 Cloves
1 small piece of Cinnamon
6 to 8 Pepper corn 
1/2 tsp Cumin seeds
1/2 tsp Coriander seeds
1/2 tsp Turmeric powder
Salt to taste
1 Egg
Oil for Frying





Method
Take a pressure cooker, add the mutton pieces, chana dal, onions, garlic, ginger, coriander seeds, cumin seeds, cinnamon, black cardomom, green cardomom, Cloves, pepper, salt, turmeric powder and 1 1/2 cup water into the pressure cooker. Close the lid and let it whistle 4 times or till the mutton has cooked. Let the pressure release, open the cooker and if any water is remaining, dry it up. Let it cool down completely. Then add the meat and the dal into a food processor, add egg and blend it until it turns into a smooth paste. Add the coriander leaves, mint leaves  and green chillies. Add salt and chillies if required. Blend it once more. Take a tray, grease the tray with oil. Apply oil on your palm. Take a lime size ball from the mixture. Roll it and flatten it a bit. Place it on the tray. Keep it in the refrigerator for 15 minutes. Take a fry pan. Add oil. Shallow fry the kababs very gently till golden brown on both the sides. Remove them on a paper towel. Serve them hot with green chutney, onions, lime and mint leaves.

Achari Machli Bhappa...


This is a fish preparation, very easy to make, spicy and scrumptious. You can serve this dish as a starter or have it as a side dish with hot steaming rice. The fish is marinated in fresh homemade achari masala. We all have left over oil from the pickle, and we discard them, but I use it up in creating other dishes, so here I have used achari oil from the pickle which gives extra punch to the dish. 

Ingredients
1 medium size around 500 grams whole Fish - Indian Salmon / Rawas,  Barramundi / Bhetki or Snapper / Rani Machli
2 tbsp Garlic and Green Chilli paste (4 Garlic and 3 Green Chillies)
6 Garlic cloves crushed
Juice of 1 Lime
1 small Tomato for Garnishing
Few Coriander Leaves chopped
1/2 tsp Mustard seeds
1 tsp Coriander seeds
1/2 tsp Cumin seeds
1/2 tsp Fennel seeds
1/2 tsp Carom seeds
1/4 tsp Fenugreek seeds
6 Red Chillies
1 1/2 tsp  Turmeric powder
Salt to taste
2 tbsp Pickle Oil


 

Method
Clean the fish well, the fish has to remain in 1 piece. Give 3 slits on the fish. Keep the fish on a foil paper. Apply salt and 1tsp turmeric powder on the fish and keep it aside for 10 minutes. Meanwhile add mustard seeds, coriander seed, cumin seeds, fennel seeds, carom seeds, fenugreek seeds 1/2 tsp turmeric powder and 4 red chillies into a grinder and grind the seeds into a powder. That makes our achari powder. In a small mixing bowl add the achari powder, lime juice, garlic - chilli paste and oil, mix it and let it stand for 5 minutes, apply the achari paste properly all over the fish, push the crushed garlic into the cuts of the fish and add 2 dry chillies. Cover the fish with the foil paper. Leave it to marinate for 30 minutes to an hour. Steam the fish in a preheated oven for 20 minutes at 200 degrees celsius or you can steam it in a steamer till the fish is cooked. Garnish it with coriander leaves and tomato. Serve it hot.

Cantonese Style Chicken Sausage and Green Garlic Vegetable Stir Fry...


Cantonese cuisine is a simplified traditional Chinese cuisine which comes from Guangdong province and is one of the Eight Culinary Traditions of Chinese cuisine. The ingredients used in Cantonese cuisine, are spring onion, sugar, salt, soy sauce, rice wine, cornstarch, vinegar, scallion oil, and sesame oil, to enhance the flavour, garlic is heavily used in some of the dishes. Ginger, chilli peppers, five-spice powder, black pepper powder, star anise and a few other spices are also used.

This dish is good for starters. The sugar balances the flavour of the sourness. Love the flavour of the garlic. 

Ingredients 
10 pieces of Chicken sausage cut into pieces
1 cup Yellow and Red Capsicum cut into cubes
1 Onion cut into cubes
2 to 3 Green chillies slit into 2 halves
6 to 8 whole Garlic cloves 
1 cup Green Garlic leaves cut into pieces 
1 tbsp Rice Wine Vinegar or White Vinegar
1 tbsp Soya Sauce
1 tsp Chilli Sauce
Salt to taste 
1/4 tsp Pepper powder
1/2 tsp Sugar 
2 tbsp Sesame seed Oil 

Method 
Take a wok or a fry pan, add oil. Heat up the oil. Add the sausages and stir fry for a minute. Add the whole garlic, green chillies and onions. Stir fry on high flame till the onions are light pink in colour. Add the capsicum and stir for 2 minutes. Add the green garlic leaves. Stir for a minute. Add the vinegar, soya sauce, chilli sauce, sugar, salt and pepper powder. Stir for a minute and serve it hot.

Kasundi Chicken Kosha Tarkari Diya...

This dish taste scrumptious with hot steaming rice. I have used home made Kasundi ( Mustard Sauce ) to marinate the chicken along with the other ingredients. You can use ready made Kasundi available in the market. I have added mushrooms and carrot to the dish. You can add potatoes too. I love little sweetness of the carrot with Kasundi. This is an experiment in my kitchen. Do try it out... I am sure you will enjoy it. 

To Marinate the Chicken
Ingredients 
6 pieces of Chicken Legs
2 tbsp of Kasundi (Mustard Sauce) 
1 tsp Ginger - Garlic - Chilli paste 
1/2 tsp Coriander powder
1/2 tsp Turmeric powder
1/2 tsp Panch phoran powder
Salt to taste
1/4 cup Curd 

Method
Mix all the above ingredients together and let it marinate for an hour. 
To make the Chicken 
Ingredients 
Marinated Chicken
1 big Carrot cut into medium size strips
2 Onions sliced
6 to 8 whole Garlic cloves 
8 to 10 small size whole Mushrooms 
1 Green Chilli slit 
1/2 tsp Panch Phoran 
2 to 3 tbsp Mustard oil

Method 
Take a fry pan, add oil. Let it come to a smoking point.  Lower the flame and reduce the heat. Add the Panch phoran. Let it crackle. Add the green chilli and sauté for few seconds. Add the garlic and sauté for few more seconds. Add the onions and carrots, sauté till the onions are light pink in colour. Add the marinated chicken, stir, cover and cook for 10 minutes. Add 1/2 cup water, let it cook for 10 minutes more. Add the mushrooms, stir and cook till the mushrooms have cooked and the water has reduced. Serve it hot..

Bhetki Macher Kanta Chorchori...


Bhetki or (Barramundi) is quite a popular fish. We Bengalis have many preparations made from Bhetki. The small size is used to make jhol or jhal. And the big size ones are cut into fillets and made into cutlets, paturi, chops, fish fingers etc. Moreover even the remaining bone along with some flesh and head are also not wasted and it is made into Kanta Chorchori. You will not find this delectable dish in any of the restaurants. It is a very simple traditional dish cooked at home. Simply have it with hot steaming rice and it is divine... 

Ingredients 
Bhetki head and bones cut into pieces marinated for 5 minutes with 1/2 tsp Turmeric powder and salt.
1 tsp Garlic and Ginger paste 
2 Green chillies slit 
2 big size Onions sliced 
2 big size Potatoes cut into wedges 
1 Tomato cut into wedges 
1/2 tsp Turmeric powder 
1/2 tsp Chilli powder 
1/2 tsp Cumin powder 
1/2 tsp Coriander powder 
1/4 tsp Garam Masala powder 
1/2 tsp Sugar 
Salt to taste
1 small stick Cinnamon 
1 Green Cardomom
2 Cloves
1 Bay leaf 
1/4 cup Mustard Oil 

Method 
Take a wok. Add mustard oil. Heat it till the smoking point.  Reduce the flame. Fry the bone and the head till golden brown in colour. Remove it from the wok and keep it aside. In the same oil add the cinnamon, green cardomom and cloves. Let it crackle. Add the bay leaf and the green chillies. Add the onions and sauté it till light brown in colour. Add the ginger - garlic paste. Sauté for a minute. Add the potatoes. Stir fry the potatoes for a minute. Add the tomato. Stir it. Add the salt, sugar, turmeric powder, chilli powder, cumin powder, coriander powder and garam masala powder. Stir it and add the fish bones. Stir and add 1/2 cup water. Cover and cook till the potatoes are cooked and the water has evaporated. Server it hot with hot steaming rice.

Posto - Narkel - Dhonepata Ar Tiler Bora / Poppy seeds - Coconut - Coriander leaves and Sesame seed Fritters....

Narkle Postor Bora is a delicacy from Bengal. It is a side dish served with hot dal and rice. My Ma use to prepare this dish adding coriander leaves and sesame seeds into it mostly on a vegetarian day and I use to enjoy it with Korair (Urid) Dal and Aloo Posto. Usually the poppy seeds are ground into a paste and then mixed with the other ingredients. Today I have ground the poppy seeds into a powder and mixed it with the other ingredients. 

Ingredients 
1/2 cup Poppy seeds powdered 
1/3 cup desiccated Coconut or fresh grated Coconut 
2 tbsp White Sesame seeds
3 tbsp Rice flour 
Salt to taste 
2 Green Chillies chopped 
1/3 cup Coriander Leaves chopped 
Oil for shallow frying 

Method
Take a mixing bowl and add all the above ingredients except oil. Add just enough water to make a dough. Divide the dough into lime size equal portion. Take a portion and make a ball and flatten it. Repeated the process for other portions too. Heat oil in a fry pan. Place the fritters in the pan and fry it on medium low heat till brown on both the sides. Serve it hot with rice and dal.

Baked Sautéed Achari Vegetables.....


This dish can be served as a side dish or a meal by itself. This dish is an Indo -Wester fusion dish. 
I have used Indian spices in the baked vegetable dish and given it a twist. This is an experiment in my kitchen. The cheese has well combined with the Indian spices. It gives a sharp taste of the achari spices as well as the creamy texture the cheese. Instead of using all purpose flour, I have used sattu. Do try it and experience it yourself. 

For the Spice powder 
Ingredients
1 tbsp Coriander seeds 
1/2 tsp Cumin seeds 
1/2 tsp Fennel seeds 
1/4 tsp Fenugreek seeds 
1/2 tsp Mustard seeds 
1/2 tsp Carom seeds 
1/4 tsp Asafoetida powder
8 Red Dry Chillies

Method 
Grind all the above ingredients in to a powder. This powder can be stored in a clean glass bottle and can be used to make pickles or any achari vegetables or meat. 

For the Sautéed Achari Vegetables
Ingredients 
8 Mushrooms cut into 4 pieces 
1 big size Onions cut into cubes 
1 Green Capsicum cut into cubes 
1 medium size Brinjal cut into medium size cubes 
1 small size Broccoli cut into small florets 
1 small size Carrot cut into thick strips 
1 mediumsize Sweet Potato cut into wedges 
8 Garlic cloves crushed 
1 tbsp AcharI Masala powder 
1/2 tsp Mustard powder 
1/2 tsp Chilli powder 
Salt to taste 
2 tbsp Mustard Oil 

Method 
Take a pan. Add oil. Let it heat. Add the garlic. Sauté it for few seconds. Add the sweet potato, carrot and onion. Sauté it. Cover and cook for 2 minutes, stirring it occasionally.  then add the brinjal, capsicum, broccoli and mushrooms. Stir fry the vegetables. Cover and continue to cook  till the vegetables are done. Add the salt, mustard powder and achari masala. Stir it. Switch off the flame. Keep it aside. 

For the Cheesy Sattu Sauce 
Ingredients 
1 cup Processed Cheese grated 
3 tbsp Sattu / Roasted Chickpea flour 
3 tbsp Butter 
1 cup Milk 
Salt to taste 
1/4 tsp coarsely ground Fennel seed powder 
1/2 tsp Mustard powder 

Method 
Take a pan and add butter. Let the butter melt. Add the Sattu and roast it for few seconds on low flame. Gradually add the milk... stirring it continuously. As the sauce thickens, add the cheese. Stir it for few seconds. Switch off the flame. Add salt, mustard powder and fennel seed powder. 

P. S. If the sauce has thickened up add 1/2 of milk and heat it up once more. 

To Assemble
Take a baking tray. Add the vegetables and pour the sauce from top. Sprinkle some more cheese from top and sprinkle with coarsely ground fennel powder. Bake it in a preheated oven for 15 minutes at 200 degrees celcius. Remove it and serve it hot.

Mutton Liver Roast.....


As Goddess Durga has already left for her home.. for Bengalis Bijoya Dashami begins. Family and friends get together... adda and feasting continues. Mainly non vegetarian dishes are cooked like Mutton Curry and Mete (Goat Liver) Chorchori  and are served with Rice or luchi and lastly sweet delicacies are served.
This time I tried a different dish instead of Mete Chorchori.. 
It is a semi dry dish and can be served as starters or can be served as side dish with Roti, Paratha or Luchi. Spiciness can be added as per your choice.
Ingredients 
500 grams Mutton Liver cut into pieces 
2 tbsp Ginger Garlic Chilli paste 
1 Onion paste 
3 Onions sliced 
4 Garlic cloves crushed 
2 Green chillies cut lengthwise 
1 Tomato sliced 
2 Bay Leaves 
Salt to taste 
3/4 tsp Turmeric powder 
1 tsp Cumin powder 
1/2 tsp Coriander powder 
3/4 tsp Garam Masala powder 
1/4 tsp Pepper powder
1/2 tsp Cumin seeds 
3 tbsp Ghee
1 tbsp Coriander leaves chopped for garnishing 

Method 
Take a pressure cooker. Put the liver pieces, onion paste, ginger - garlic - chilli paste, salt and 1/2 tsp turmeric powder in the pressure cooker. Mix it and let it stand for 1 hour. Close the lid of the pressure cook and cook it till 4 whistles or until cooked. Let the pressure release, open the lid and keep the cooked liver in a bowl. Take a wok. Put ghee. Let it heat up. Add the cumin seeds and bay leaves. Let it crackle. Add the crushed garlic and sliced onions. Sauté it for 2 minutes. Add the green chillies. Stir fry it for 3 to 4 minutes or until the onions are brown in colour. Add the cooked liver. Stir it for a minute. Add the remaining turmeric powder, coriander powder, cumin powder and garam masala powder. Stir and cook for 2 minutes. Add the sliced tomato. Stir and cook for 3 to 4 minutes. Garnish with coriander leaves before serving.

Potoler Khosha Bata....


Peel of Pointed Gourd made into paste... 
 "Bata" means paste. It is a kind of a coarsely ground chutney. It is a dish from Bangladesh and West Bengal. It is served as a side dish and eaten with the hot steaming rice. There are different types of Bata, made from any vegetable peel like raw banana, green peas, pumpkin, bottle gourd, pointed gourd etc or green leaves or fish. Earlier days people living in the country sides having large families preferred to use all the parts of the vegetable for cooking. Apparently now with nuclear family, moving into cities and change in generation, this dishes are rare to find. 
You can actually land up eating a good amount of rice with the Bata. Today I making Potoler Khosha Bata / Pointed gourd peel paste. There are different ways to make this dish.. This is my version of making it...

Ingredients
Pointed Gourd peels from 300 grams Pointed Gourd
2 Green Chillies 
1 Garlic clove
1/4 tsp Nigella seeds / Kalonji 
1 tbsp Fresh or Desiccated Coconut 
Salt to taste 
1/4 tsp Sugar ( Optional ) 
1/8 tsp Tumeric powder
1 tbsp Mustard Oil 
1/2 tsp Mustard Oil for garnishing 

Method
Add the pointed gourd peels, 1 green chilli and garlic into the grinder. Grind it into a coarse paste. Take a pan, add 1 tbsp oil. Let it heat. Add the Nigella seeds and 1 green chilli into the oil. Sauté it till the seeds crackle. Add the paste, on a low flame stirring it continuously, cook it for 5 minutes. Add salt, sugar and turmeric powder. Continue to cook for 5 minutes more or till the rawness of the paste disappears. Add the coconut, cook it for another 3 minutes. Before serving add 1/2 tsp Mustard oil. Serve it hot with steaming rice.

Chingri Macher Paturi ......


Macher Paturi is a very popular dish of Bengal. It can be made with fish like Hilsa, Bhetki or Prawns. It is cooked in a banana leaf or incase the banana leaf is available then pumpkin leaf or bottle gourd leaf. The main ingredients for the paturi are fish and mustard paste which is wrapped into a parcel made with banana leaf and then steamed. 
Here is my version of making the paturi. 

To Marinate the Prawns
Ingredients
270 grams medium sized cleaned Prawns 
1/4 tsp Turmeric powder
Salt to taste

Method
Marinate the prawns with salt and turmeric powder and keep it aside for 15 minutes.

For the Paste
Ingredients
1 1/2 tbsp Mustard seeds
3 tbsp shredded fresh Coconut or Desiccated Coconut
5 small Green Chillies
1 Garlic clove
1/2 tsp Turmeric powder
3 tbsp Curd
Salt to taste
1/2 tsp Sugar
1 to 2 tbsp Water 

Method
Soak the mustard seeds in water. Drain the water out.  Blend the mustard seeds and all above ingredients in a blender into a fine paste.

To make the Paturi
Ingredients
Marinated Prawns
5 Green chillies slited lengthwise
5 Red Chillies  (Optional) 
3 tbsp Mustard oil
Banana Leaves
Thread

Method
Take the wet paste in a bowl. Add the mustard oil. Mix it. Add the marinated prawns. Mix it with the paste. Let it rest for 15 minutes. Cut the banana leaves into rectangular pieces. To make it more pliable, slightly warm up the banana leaves over low flame for few seconds.  Apply mustard oil on the lighter side of each leaf. Place 6 prawns along with the mustard paste in the center of the leaf. Place one green and red chilli on top of it and fold the sides of the banana leaf by overlapping each other to make a parcel. Tie a thread around the parcel to secure it. Steam the parcels in a steamer for 10 minutes. Cut the thread to open the parcel before serving it. Seve it with hot steaming rice.
