Aslam’s Butter Cream Chicken


Few days back one of the foodie friend Rakesh Sharma ji had posted this fabulous recipe in a group. I was very tempted to make this recipe... and believe me this recipe is worth making.. 
Sharma ji had mentioned in his post that Aslam’s Butter Chicken is a very famous dish sold at Aslam Chicken near Jama Masjid, Old Delhi. 
This dish is very different in look and taste from the Punjabi butter chicken recipe. 
In the actual dish Aslam Chicken grills the marinated chicken pieces on a charcoal grill and then the main key ingredients other than the chicken is loads of Butter, fresh cream and curd. The spices that are used in the dish are a top secret. If you scroll the net, there are loads of videos that teaches us to make the Aslam Butter Cream Chicken, Since this recipe was tried and tasted, I preferred to adapt this recipe. 
It’s a very easy recipe... we can grill the chicken in an oven at home, or on a skillet. 
To get the smoky charcoal flavour, heat up the charcoal and place the hot charcoal on a small plate in between the marinated chicken, pour a tsp of ghee and cover the bowl for a minute - I have used this technique and this was not mentioned in the original recipe and it’s optional. 
 Then the chicken can be grilled and further method can be followed as per the recipe. I personally have not visited the restaurant and tasted the original dish, but this recipe indeed very delicious and my family loved the dish... I have added the Garam Masala powder which was not mentioned in Sharma ji’s recipe. Also I have reduced the quantity of the chicken, hence changed the quantity of the other ingredients and have added the butter as per my requirement. The original recipe calls for around 100 grams plus butter. The method follows the same.. 

For Marinating the Chicken 
Ingredients 
500 grams Chicken cut pieces 
1/2 cup of Hung Curd
1 tsp Ginger paste
1 1/2 tsp Garlic paste
1/2 to 1 tsp Chilli paste
Juice of 1 small size lime 
Salt to taste 
1/2 tsp Pepper Powder 
1/2 tsp Garam Masala powder 
1/2 tsp Kasuri Methi
1 tsp Cumin seed powder 
1 tbsp Amul Butter

Method 
Marinate the chicken pieces with all the above ingredients and keep the marinated chicken for 5 to 6 hours. We can use a hot burn charcoal to give a smoky flavour to the dish as mentioned in the description. 

To make the Butter Cream Chicken 
Ingredients 
Marinated Chicken
1/2 cup of Hung Curd 
1/4 cup of Fresh Cream
1/2 tsp Chaat Masala
1 tbsp Butter for Grilling 
4 tbsp and more Melted Butter

Method 
Preheat the oven at 180 degrees celsius. Take a baking tray. Take the marinated chicken and place the chicken pieces on the baking tray. Rub 1/2 tbsp of butter on the chicken pieces and turn the chicken pieces. Grill the chicken pieces at 180 celsius for 15 minutes. Remove the baking tray, apply the remaining 1/2 tbsp butter on the chicken pieces and turn the chicken pieces and continue to grill the chicken pieces at 200 degrees celsius for 15 minutes. Once done, the chicken pieces are golden brown, remove the chicken pieces from the baking tray. For the gravy, take a pan, add the remaining marinated juices into the pan. Let the water of the marinated juices reduce a bit, add the chicken pieces and coat the chicken pieces with the marinated juices. Switch off the flame. Transfer the chicken pieces into a serving bowl, now take a bowl, add the hung curd and the cream into the bowl and mix the ingredients together. Sprinkle the Chaat masala. Pour the curd and the cream over the chicken. Mix the ingredients together. Now pour the melted butter over the chicken. The chicken is supposed to be drenched in butter... but I used less butter for health reasons... Serve this unique butter chicken with rumali roti, sliced onion and lime.

Grilled Fish


Grilled fish can be eaten as one of the healthy starter or can be enjoyed for dinner with some salads. Grilled fish can be marinated in many ways. Boneless fish or slices of big fish can be used for grilling. Bhetki, Basa, Ghol etc can be used for grilling. 

Ingredients 
6 pieces of Ghol fish slices 
1/2 cup Hung Curd
3 tbsp Mayonnaise 
1 tsp Garlic paste 
Salt to taste
1 tsp Pepper Powder 
1 tsp Kashmiri Chilli powder
1 tsp Garam Masala powder 
1 tsp Cumin seed powder 
1 tbsp Besan / Chickpea flour 
1/2 tsp Carom seeds
1 tbsp Mustard Oil 

Method 


Marinate the fish with all the above ingredients well and keep it for an hour or two. Take a foil and spread it on a baking tray. Keep the fish slices on the foil. Add some of the marinade on the fish. Grill the fish in a preheated oven at 200 degrees celsius for 10 minutes. Remove the tray from the oven. Turn the fish gently and apply the remaining marinade on the fish, continue to grill for another 10 minutes. Remove the fish and serve the fish with green coriander chutney and spicy mango -  cucumber - tomato salad.

Malai Tangdi Kabab


Now the best way to enjoy restaurant food is to make it at home, one of my favourite restaurant dish is Malai kabab... I had 6 pieces of chicken tangdi at home. So marinated the chicken tangdi. Since the kababs are made in tandoor and we don’t have at home, we can give a smokey flavour by burning a charcoal piece and placing it on a small plate and placing the plate on the chicken pieces and pouring little oil over the charcoal and closing the bowl with a lid, before grilling the chicken pieces. 
This dish can be had as a starter. Garnish the Kabab with onion, mint, tomato and green chutney. 
Ingredients 
6 Chicken drumsticks 
1 tsp Garlic paste
1/2 tsp Ginger paste
Juice of 1/2 Lime 
1/4 tsp Fresh Green Chilli paste 
1/4 tsp White Pepper Powder 
3 tbsp Fresh Cream 
4 tbsp Hung Curd 
1/2 tsp Shahi Garam Masala powder 
Salt to taste
1 tbsp Mustard Oil 
1 tsp Butter 
Onion rings, Mint leaves and tomato for garnishing 

Method
Take a bowl, add the curd, ginger, garlic, green chilli, lime juice, salt,  pepper and garam masala and mix well, add the chicken tangdi. Rub all the ingredients well. Marinate it for minimum 2 hours. The longer it’s kept it’s better. I had kept it for 8 hours. Now add the cream and the mustard oil and keep it for another 2 hours. 
Preheat oven at 200 degrees celsius. Place a aluminium foil on the baking tray. Place the marinated chicken drumsticks on the foil. Add some marinated juices, put the tray in the preheated oven and grill it for 15 minutes, remove the tray and turn the chicken pieces, add the remaining marination and grill for another 15 minutes. Remove the tray from the oven, apply butter on the chicken tangdi. 
Serve hot garnished with onion rings, mint, tomato and green chutney.

Fish Tikka


Tikka is a dish that can be eaten as starter or appetiser. Tikka can be made with meat, fish, panner or vegetable. It’s a popular dish of India, Bangladesh and Pakistan. 
 The meat or fish is marinated with spices and lime or curd. The marinated meat or fish is skewered and cooked on a tandoor.  The pieces are brushed with butter or ghee at intervals. It is served with Coriander Chutney, Onion and Lime. 
Today I have made fish tikka. You can use any boneless fish. I have used Tilapia fish.  



Ingredients 
500 grams Any Boneless Fish Pieces 
Juice of 1/2 Lime 
1 tsp Ginger paste
1 tsp Garlic Paste
1 tsp Kashmiri Chilli Powder 
1/2 tsp Cumin Powder
1/2 tsp Garam Masala powder
Salt to taste 
1 tbsp Butter 






Method 

Take a bowl, add lime juice, chilli powder, cumin powder, garam masala powder, salt to taste, ginger paste and garlic paste. Mix all the ingredients together. Add 2 to 3 tbsp of water. Mix the ingredients again. Add the boneless fish pieces and marinate the fish for an hour or two. Take a skewer, insert the fish pieces into the skewer. Place the skewers on the tandoor. Apply butter on the fish at intervals and cook the fish on both the sides. Garnish with onion, tomato and lime wedges. Serve with green chutney.

Easy Grilled Chicken



An easy delicious chicken recipe... that can be enjoyed as starter... Grilled chicken can also be served with sautéed vegetables. Chicken can be substituted with fish, prawns or paneer. 


Ingredients
250 grams Boneless Chicken cut into big pieces 
Juice of 3/4 lime
1 tsp Garlic powder 
1 tsp Dried Mixed Herbs 
¼ - 1/2 tsp Chilli Flakes 
Salt or Pink Salt to taste 
2 tbsp Melted Butter 


Method 
Marinate the chicken with all the above ingredients for an hour. Take a grill pan, let it heat. Grill the chicken pieces on a low flame until cooked and golden brown on both the sides. Remove the chicken pieces from the grill and cut the chicken into smaller pieces. Drizzle the juice on the chicken that was left on the grill. Serve it hot.

Indian style Grilled Chicken

Indian style Grilled Chicken


For the Marination

Ingredients

1 Whole Chicken

1 Onion paste

2 tbsp Ginger Garlic Chilli paste

1/2 tsp Turmeric powder

1/2 tsp Garam Masala powder

1 tsp Curry powder

1/2 tsp Chilli powder

Salt to taste

1/2 cup Curd

4 tbsp Mustard oil

Method

Give some slits on the chicken. Rub salt on the chicken. Now rub all the ingredients well on the chicken  and keep it aside for 2 hours.

For the Grilled Chicken

Ingredients

Marinated Chicken

3 medium size Potatoes cut into wedges

1 Onion sliced

1 Tomato cut into wedges

2 tbsp Mustard oil

Few Coriander leaves chopped

Method

Take a baking pan, place the marinated chicken on the baking tray, Mix the marinated juices with the potatoes, tomato and onions. Place them on the baking tray around the chicken. Drizzle with oil. Bake the chicken for 55 to 60 minutes at 200 degrees celcius in a preheated oven. Sprinkle chopped coriander leaves before serving..

Peri Peri Grilled Chicken Sizzler servered with Sautéed Mushroom Peri Peri Rice,  Stirred Fried Veggies and Mashed Potatoes.....


Sizzler is one of my favourite dish... I love Jughead  sizzlers... And the Peri Peri Sizzler which is available is my daughter's and husband's favourite... Wanted to give it a try.... 

The piri-piri pepper, known as peri-peri in Africa, has been a staple of the Portuguese table since the Age of Discovery beginning in the 14th century. After Columbus brought the fiery fruit back to the continent from the New World in 1493, it was the Portuguese who carried it throughout the globe. In fact, the chili, including relatives of the African piri-piri peppers, has become so famous, that it’s used in world cuisines. This sauce, found everywhere in Portugal and several of its former colonies, specifically Angola and Mozambique. It can be used on kind of meat. The  piri-piri peppers are Thai bird, red jalapeño, santaka, arbol, cayenne, or Tabasco, depending on availability as well as  heat preference and tolerance.

I have used dried bedki chillies which was available in my kitchen... 

For the Peri Peri Sauce 

Ingredients 
12 Fresh Red Chillies or Dry Chillies 
1 tsp Red Chilli powder 
8 Garlic cloves 
Salt to taste 
1/4 cup Vinegar 
½ cup Olive oil

Method 
Soak the dry chilles in the vinegar for 15 mintues. Blend all the above ingredients in a blender and blend it into a smooth paste. After use the remaining sauce can be stored in a bottle and kept in the fridge. 
P.S. If using fresh chillies then blend it directly.

For the Chicken to Marinate and Grill the Chicken 

Ingredients 
2 Boneless Chicken breast pieces
4 tbsp Peri Peri Sauce
Salt
1 tbsp Olive oil

Method 
Take the chicken pieces and rub salt on it. Add the Peri Peri Sauce and marinate it for 30 minutes. Take a gas griller. Add oil. Let it heat.  Add the chicken pieces and cook till brown and grilled from both the sides. Don't  throw the marinated juices.

For the Peri Peri Sizzler Sauce

Ingredients 
Remaining Marinated Peri Peri Sauce
1 Onion chopped 
4 Garlic Clove chopped 
1 tbsp Corn flour 
1 tsp Olive oil

Method 
Take a pan, add oil. Let it heat. Add the onion and garlic. Let it sauté till translucent. Add the marinated sauce and 1/4 cup water. Cook for 2 minutes. Add 2 tbsp water to the corn flour. Stir it. Add it into the sauce. Stir it till it thickens a bit. Keep it aside.

For the Stir fry Veggies 

Ingredients 
1 Potato peeled and cut into wedges 
6 Baby Corn
1 medium size Carrot cut into strips 
Few medium size Cauliflower florets 
1/4 cup Green Peas 
Salt to taste 
1/4 tsp Pepper powder 
1 tbsp Olive oil

Method
Par boil the veggies and drain the water out. Take oil in a pan. Heat it. Add the veggies and sauté it till stirred fried.

For the Mashed Potatoes 

Ingredients 
2 Potatoes boiled and mashed 
1/4 cup Amul cream 
1 tsp Olive oil 
Salt to taste
1/4 tsp Pepper powder

Method 
Mix all the above ingredients into a smooth paste.

For the Sautéed Mushroom Peri Peri Rice 

Ingredients 
2 cups of Cooked Rice 
2 cups Mushrooms sliced 
1 Onion sliced 
4 Garlic cloves minced 
2 to 3 tbsp Peri Peri Sauce 
Salt to taste 
1 tbsp Olive oil

Method 
Take a pan, add oil. Let it heat. Add the onion and garlic, saute it till translucent. Add the mushrooms. Stir fry for 2 minutes. Add the salt, pepper powder and peri peri sauce. Stir and cook for 2 minutes. Add the rice and stir fry for another 2 minutes.

For Assembling 

Ingredients 
Cabbage leaves
Grilled Chicken 
Sautéed Veggies 
Mashed Potatoes 
Sautéed Mushroom Peri Peri Rice 
Piri Piri Sizzler Sauce
1 tbsp Olive oil
1 tbsp Oil and 1 tbsp Vinegar mix 

Method 
Take a sizzler skillet. Heat it till smoky and hot. Add oil, spread the cabbage leaves on the skillet. Lower the gas and let the plate remain on the flame till served. Arrange all the remaining ingredients as per the choice except for the sauce. At the end drizzle some sauce on top and serve the rest of the sauce in a bowl. For the sizzling effect, add the Oil and vinegar mix in between the empty space. Enjoy it.
