Maggi Noodles with Veggies and Eggs...

Maggi Noodles with Veggies and Eggs... 
It is a all time favourite dish of many. My husband claims that he lived on Maggi during his collage days, my daughter can have Maggi any time of the day. For me it is quick and easy to cook. I have cooked it in a desi way with Veggies and Eggs and seasoned it with Madras Curry powder.. 

Ingredients 
4 pieces of Veg Maggi Noodles
4 Eggs
1/4 cup of each Vegetables chopped 
Carrot
Capsicum 
French beans 
Cauliflower or Broccoli 
Onion
Tomato
1 tsp Garlic chopped
1 tsp Green chillies chopped
2 tsp Curry powder
2 Maggi Masala sachets
Salt to taste 
1 tbsp Oil
1 tbsp Butter 
Few Coriander Leaves chopped for garnishing 


Method
Take a wok, add oil and butter. Let the butter melt. Add the garlic and chillies. Sauté it for a minute, add the onions. Sauté it till brown in colour. Add the vegetables one by one and stir it, add the curry powder, Maggi masala and salt. Stir it. Take Maggi, crush it and add it to the vegetables, stir it. Add 3 cup of water, stir it. Cover and cook, stirring in between  till it is done, and little water is left in the wok. Break the eggs on top, cover and cook till the eggs are done, switch off the flame and garnish it with coriander leaves.

Chicken Meat and Veggies Stuffed Buns...


Chicken Meat  Stuffing 
Ingredients 
150 grams Chicken minced
1 Egg
1 Onion chopped finely 
1 tsp Garlic chopped finely 
1 tsp Green chillies chopped finely
1 tbsp Coriander leaves chopped 
1/4 cup Spring Onions chopped finely
3 tbsp each Yellow and Red Capsicum chopped finely 
2 tbsp Carrot chopped finely 
1/4 cup Mozzarella cheese grated
Salt to taste 
1 / 4 tsp Pepper powder 
1/4 tsp Italian seasoning

Method 
Take a mixing bowl and mix all the above ingredients. Knead it very well for 5 minutes till all the fats incorporates well. Keep it in the fridge for 30 minutes to chill.

Buns 
Ingredients 
400 grams  All purpose flour 
1 1/2 tbsp Dry Yeast
2 tbsp Sugar 
1/4 Cup Lukewarm Milk 
1 Cup  Lukewarm Water
2 tbsp Melted Butter
Salt to taste
Egg wash 
Chicken stuffing
2 tbsp Mozzarella grated 
Italian seasoning for sprinkling 

Method
Take a mixing bowl. Add flour and salt. Mix it. Make a well in the centre of the flour. Add sugar, yeast and 1/4 cup lukewarm milk + 1/4 cup lukewarm water. Stir it with out disturbing the surrounding flour. Cover and let it rise. After it rises. Start mixing the flour... Add water little at a time to make a soft dough. Add 1/2 tbsp melted butter, Knead the dough for 5 minutes adding 1/2 tbsp melted butter in between. Rub some butter on top, cover and keep for rising double in size. Rub some butter on the palms. Sprinkle some flour on the platform, take the dough, punch it and knead it again for sometime. Divide the dough into equal proportions. Grease the baking tray.  Rub some butter on the palms. Take one portion of the dough. Roll the dough giving it a round shape. Flatten the dough and take a portion of the stuffing in the centre of the dough, close the edges and give it a round shape. Repeat the process with other buns. Place each buns on the baking tray at some distance. Cover with soft Malmal cloth till it rises double in size. Brush it with egg wash. Bake it in a pre heated oven at 180 degrees celcius for 20 minutes. Take the tray out of the oven, sprinkle grated mozzarella cheese and Italian seasoning from top. Bake for another 5 minutes more at 160 degrees celcius till brown on top. Cool the buns a bit and remove it from the tray.

Egg Omelet Sandwich with Cottage Cheese Spinach and Carrot Spread

Egg Omelet Sandwich with Cottage Cheese Spinach and Carrot Spread.......
For the Spread
1 cup Cottage cheese crumbs
1/4 cup Hung Curd / Yogurt
2 tbsp Fresh Cream
1 cup Spinach chopped
1/2 cup Carrot shredded
1/4 tsp Garlic powder
1/4 tsp Pepper powder
Salt to taste
1 tsp Butter

Method
Take a pan, add butter, let it melt. Add spinach and saute till the water in the spinach has dried up. Keep it aside. In a blender add cottage cheese, hung curd, cream, salt, pepper, garlic powder and blend it till smooth. Add spinach and carrot, mix it. Keep it aside.

Egg Omelet
Ingredients
6 Eggs
1 medium size Onion chopped finely
1 medium size Tomato de seeded and chopped finely
1 tbsp Red Chillies sliced
Salt to taste
1/4 Pepper powder
2 tbsp Oil

Method
Take a mixing bowl, add all the above ingredients expect oil. Beat the eggs well. Take a big pan, add oil, let it heat. Spread the egg batter and let it cook. Once done cut it into pieces.

To Assemble
Take bread slices, apply the spread on the slices. Add a omelet piece on the bread slice. Cover with another bread slice, cut the sandwich into pieces. Serve with potato chips....

Spinach, Carrot and Cheese Roulade

Spinach, Carrot and Cheese Roulade
For the Filling
Ingredients
1/4 cup Cream Cheese
1 cup Cottage cheese
2tbsp  Yogurt / Curd
Salt to taste
1/4 tsp Italian seasoning
1 cup Carrot shredded

Method
In the blender add all the above ingredients except carrots and blend it till smooth. Keep it aside.

For the Spinach Roulade
Ingredients
4 cups Spinach chopped, blanched and water squeezed out

4 Garlic cloves Minced 
3 Eggs separated
2 cups Mozzarella shredded
Salt to taste
1/4 tsp Pepper powder
2 tbsp melted Butter

Method
Take a mixing bowl, add spinach, 1 cup Mozzarella cheese, egg yolk, garlic, salt to taste and pepper powder. Mix it. Take the egg whites and beat it till stiff. Add the egg whites in the spinach and fold it gently. Take a baking tin. Line a the tin with greaseproof paper and it brush with butter. Pour the batter in the tin. Bake at 180 degrees celcius  degrees for 10 minutes in a preheated oven. Take the tin out and spread the remaining cheese and bake it again for 15 minutes. Remove it from the oven and turn this over on a greaseproof paper to cool slightly. Peel the top layer of paper and roll up gently with the bottom greaseproof paper in the roll and leave to cool.

To Assemble
Open up the roll. Spread the filling and sprinkle the carrots on top. Roll it back. Chill in the fridge for 1 hour. Cut into roundles and serve.

Egg and Vegetable Sandwich with Spicy Garlicky Cheese Sauce

For the Spicy Garlicky Cheese Sauce
Ingredients
1 tbsp  Butter
3 tbsp Cream Cheese
4 tbsp Curd
6 Garlic cloves
2 Red Chillies
Salt to taste
1/2 tsp Lime Juice

Method
Add all the above ingredients in the blender and blend it.

For the Sandwich
Ingredients
1 White Bread Loaf sliced
2 Boiled Potatoes sliced
2 Tomato sliced
1 Cucumber sliced
2 Onions sliced
Few Cabbage leaves cut into thin slice
4 Boiled Eggs sliced
Spicy Garlicky Cheese Sauce
Salt to taste
Pepper powder for sprinkle
Butter to apply on bread

Method
To make one sandwich, take 3 slices of bread. Apply butter on the bread slices. Place some slices of cucumber, onion and tomato on a slice of bread, sprinkle some salt and pepper powder on the vegetables, drizzle a tbsp of sauce. Cover the vegetables with a bread slice. Place few sliced egg , potato and cabbage leaves, sprinkle some salt and pepper powder,  drizzle a tbsp of sauce. Cover it with a bread slice and the sandwich is ready to be served.. To make it more creamy cheese spread can be added..

Chilli Cauliflower Bread Sticks with Marinara sauce
Ingredients
1 big size cauliflower, cut into small florets and minced
1 tsp Pickled Red Chill sliced or Green chillies chopped
1 tsp Italian seasoning
1/2 tsp Pepper powder
Salt to taste
3 Egg whites beaten
1/2 cup + 1 cup Mozzarella cheese
Method

Cook the minced florets in a pan till tender. Remove cooked cauliflower from pan and cool it . Place the cooked  cauliflower in a towel and holding by the ends,  squeeze the liquid out of the cauliflower. No water should remain.Transfer the cauliflower to a mixing bowl along with 1/2 cup cheese, italian seasoning, chilli, pepper and salt and mix it well. Gently fold in the egg whites.  Transfer the cauliflower mixture into the baking tray lined with parchment paper. Bake for 20 minutes, at 200 degrees celcius in a preheated oven.  Remove from the oven and top with remaining 1cup cheese. Bake for another 5 minutes or until cheese turns golden brown. Cool it. Cut it into breadsticks and serve hot with marinara sauce.

Marinara Sauce
Ingredients
2 cups of Tomato seeded and diced
2 onions chopped
1 garlic clove  minced
1/4 tsp of each dry Oregano and Basil
Salt to taste
1/4 tsp Pepper powder
1/2 tsp Sugar
2 tbsp Olive oil

Method
Heat oil in a saucepan.  Add onions and garlic and sauté until translucent. Add tomatoes, oregano, sugar and basil and simmer until thickened, stirring occasionally. Season with salt and pepper. Cool it. Add the sauce in the blender.. Blend it until it becomes into a puree. Add it back in to the saucepan and simmer for 2 minutes. It is  ready to be served...

Spicy Mutton Tortilla Roll with Green Veggies..
Very easy to make... Healthy and delicious... I always make Mutton roast and keep... It serves my purpose of making quick sandwiches and rolls.. Take a big chunk of boneless mutton. Boil the mutton piece with garlic, onion, ginger, cloves, cinnamon, bay leaves and salt. Once done, take the mutton piece, baste it with butter and roast it for 30 minutes at 200 degrees celcius, till brown on both the sides. Once cool, cut it into strips or shred  it and use it. Make whole wheat tortilla. For the roll, add the mutton roast and vegetables with any sauce of your choice. 
Ingredients
6 Whole wheat Tortilla
1 1/2 cup Mutton Roast shredded
1 Onion chopped
1 Tomato cut into thin stripes
2 Green chillies minced
Few Lettuce leaves
Few Kale leaves
1/2 cup Carrot shredded
1/4 cup Radish shredded
1/2 tsp Lime juice
1/4 cup Chilli sauce 
Salt to taste
Method
Take a bowl. Add tomato, onion, chopped chillies, shredded carrots, radish, salt and lime juice. Mix the salad. Take a tortilla, spread little chilli sauce in the center of the tortilla, add mutton roast stripes, lettuce leaves, Kale leaves and vegetable salad.  Roll the tortilla and enjoy.

"Better Go Green" is my latest mantra. With increasing number of man made disaster in our environment as well as increasing number of health issues... We better go green... Grow more plants and tree in the surrounding.... Plant some in your house.. Try to grow few green veggies in the pot..... Eat more green..... Leafy green vegetables have full of vitamins, minerals and fights diseases. They are a good source of fiber and provides nutrition to the body. It manages weight loss. Leafy vegetables also contains water to keep you hydrated. 
Every day  have 4 cups of Vegetables in the whole day... That includes leafy as well as other vegetables... In the form of cooked and raw..
Ingredients
1 cup of fresh Tuna boiled and made in to flakes
6 Eggs beaten
1 Onion finely chopped
3 Green chillies chopped
4 Garlic cloves Minced
1/4 cup Spring Onion chopped
1 cup Spinach chopped and blanched
4 tbsp Coriander leaves paste
Salt to taste
1/2 tsp Pepper powder
1/2 cup Mozzarella and Cheddar grated mix
2 tbsp Olive Oil

Method
Take a pan. Add the oil. Add onion, garlic and chillies. Sauté till light brown. Add the tuna flakes. Sauté for 2 minutes. Add the beaten eggs. Stir continuously, add the spring onions, spinach leaves and coriander paste. Stir and cook for 3 minutes.  Add salt, pepper and cheese. Cook for another 2 minutes. Serve hot with bread.
P.S. Dill leaves, bokchoy, green peas, Shrimps etc can be added..

Fluffy Cheesy Potato Casserole


Ingredients
6 Eggs
2 Big Potatoes peeled and grated
1/2 Red Capsicum thinly sliced
4 Garlic cloves minced
2 Green Chillies minced
2 tbsp Parsley chopped
1/2 tbsp Chives chopped 
1/4 cup Cheddar + Mozzarella grated
1/4 cup Milk
1/4 cup Whole Wheat Flour
 Salt to taste
1/2 tsp Pepper  powder
1/2 tsp All Spice powder
2 tsp Butter

Method
Put the grated potato in salt water and par boil it. Drain the water from the potato and keep it aside. Take the eggs and separate the yolks from the White. Beat the yolk, add salt, pepper powder, all spice powder and milk, whisk it. Add the flour, cheese, butter, potatoes, capsicum, parsley, chillies and garlic. Mix the batter well. Take a glass baking bowl. Pour the batter and bake at 200 degrees celcius for 10 minutes in a pre heated oven. Take the bowl out of the oven and stir the egg batter once, put it bake in the oven and bake it for 20 minutes more. Mean while the eggs are baking, take the egg whites, add salt and 1/4 tsp pepper powder. Beat the egg whites till stiff.
After the baking time is over, take the bowl  out and with the help of a tbsp, drop the egg whites on the baked egg, put the bowl back in the oven and bake for 10 minutes more till the eggs whites are cooked and brown from top. Sprinkle chopped chives from top. Serve it with toast or sautéed mix vegetables...

Spinach Corn and Egg Casserole....


Microwave recipe
Ingredients
6 Eggs
1 cup Corn
1 cup Spinach chopped
2 tbsp Garlic, Ginger and Fresh Chilli minced
Salt to taste
1/2 tsp Pepper powder
3 tbsp Whole Wheat Flour
1 cup Milk
1 tbsp Nutralite Spread
1/2 cup grated Cheddar and  Mozzarella cheese

Method
Take the corn in a microwave bowl, add 1 cup of water and cook the corn for 5 minutes. Remove it from the microwave, drain the water and keep it aside. Take the spinach, add 1/2 cup water and  microwave it for 2 minutes. Take it out. Beat the eggs, add salt and pepper. Take a glass baking dish, add nutralite spread, put the dish in the microwave for 30 seconds. Take it out. Add the garlic, ginger and chilli mince, stir it. Put it in the microwave for 2 minutes, stirring it at the interval of 30 seconds. Take it out. Add the whole wheat into the dish, stir it. Microwave it for 2 minutes, stirring in between every 30 seconds. Take it out, add the milk and whisk the flour with the milk. Put it back for 3 minutes, whisking it every 30 seconds. Take it out, add the beaten eggs to the white sauce, whisk it. Take 1/2 cup corn and crush it. Add the whole corn, crushed corn and spinach to the beaten eggs and white sauce. Microwave it for 4 minutes. Take it out. Sprinkle the cheese and microwave  it for 6 minutes more. Serve it with bread toast.

Spinach and Corn Delight

Spinach and Corn Delight
I have adapted this recipe from the book "The Landour Cookbook". The recipes in this book are over 100 years old. This recipes are taken from families residing along the hillsides. The intermingling of European, American and Indian flavours created a unique Anglo - Indian aroma which spread all over the hillsides.The missionary movement did not confined to schools.  In 1920s Mrs. Lucas, wife of the Pastor of Kellogg Church in Landour joined Mrs. Irene Parkar, the wife of Mr. Allen Parker, Principal of Woodstock School to form a Reading Club. They would meet every week. Soon in 1928 they compiled the recipes into a cook book.

I have changed few ingredients from the original recipe Corn Delight. I have omitted potatoes and becon used in the recipe and added spinach, whole wheat flour, fresh cream, eggs, garlic and green chillies in the recipe.
Original recipe
Ingredients
2 cup Potatoes boiled and mashed
1 cup Corn
1/2 cup chopped Onion
1 slice Becon
4 cup Milk
Salt and Pepper to taste

Method
Mix all the ingredients well and cook. Flour can be add to thickened. Serve on toast.

My recreated recipe
Ingredients
2 cups Spinach chopped
1 cup boiled Corn
1 chopped Onion
4 Garlic cloves minced
1 Green chilli minced
1 cup Fresh cream
2 cups Milk
2 eggs
2 tbsp Whole wheat Flour
Salt and Pepper to taste

Method
In a mixing bowl, add cream, milk, salt, pepper, eggs and flour. Beat the ingredients. Take a pan, add onion, garlic,chilli, spinach and corn. Sauté it for 4 to  5 minutes on low flame. Add the liquid ingredients and on low flame whisk and stir it till all the ingredients combines well and thickens up. Toast English muffins or bread slices and top it up with Spinach and Corn Delight.

Healthy Sandwich

Healthy  Sandwich
Ingredients
4 Boiled Eggs yolk removed (optional)
2 Potatoes Boiled
1 Onion chopped
1/2 Capsicum chopped
2 Green Chillies
1/4 Cup Sprouted Moong
2 tbsp Curd
Rock Salt to taste
1/2 tsp Pepper powder
1/2 tsp Roasted Cumin powder
1 Packet Brown, White or Multigrain Bread
1 tbsp Melted Butter for brushing

Method
Take a mixing bowl, add the boiled egg whites, potatoes, onion, capsicum, green chillies, sprouted moong, curd, roasted cumin powder,  salt and pepper powder. Mix it together.  Take 2 pieces of bread. Add 2 big spoon of the suffing. Toast it on a skillet. Brush melted butter on both the sides. Serve hot with sauce and chutney.
P. S. If vegetarian please omit the eggs and increase the proportion of the vegetables. Grated Carrot, grated Beetroot , grated cucumber can be added for the suffing.

Fish Fry Healthy Treat for the Tastebuds and Soul
It is one of the Bengali Delicacy. It is a well know street food of Kolkatta. Usually it is fried in oil, but today I have made fish fry which is not fried.

Ingredients
6 pieces of Boneless Fish Fillets cut into rectangle shapes
1/2 tsp Garlic paste
1/4 tsp Chilli paste
1/4 tsp Ginger Paste
Rock Salt to taste
1/2 tsp Pepper powder
1/2 tsp Lime juice
1 cup Roti Crumbs
2 Egg Whites
Oil spray

Method
Marinate the fish with lime juice, ginger paste , garlic paste , chillies paste, pepper powder and salt for 1 hour.  Beat the egg whites. Take the roti crumbs on a plate. Dip the marinated fish fillet in the egg white. Apply the roti crumbs on the fish. Dip the fish once more in the egg white and coat the fish again with the roti crumbs and shape the fish properly. Take a baking tin. Spray the oil on the baking tin. Place the fish fillets on the baking tin. Grill at 200 degrees celcicus for 45 minutes in a pre heated oven, turning the fish every 15 minutes spraying oil once on both the sides of the fish. Serve hot with salad and mustard sauce.

Healthy Veg Biriyani with Carrot, Cucumber and Mint Raita served with Adraki Roast Chicken Legs.

On a diet.... So what... Life is to enjoy and not sulk.. Today enjoyed Eid diet food for lunch with

Healthy Veg Biriyani with Carrot, Cucumber and Mint Raita served with Adraki Roast Chicken Legs... All without oil..

For Veg Biriyani
Ingredients
1 cup Basmati rice washed and soaked in water for 15 minutes
4 to 5 French beans cut into big pieces
1 Potato cut into 4 pieces
4 small size Mushrooms kept whole
1 small size Broccoli cut into big pieces
1 small size Green Capsicum cut into cubes
1 small Onion cut into cubes
1 Tomato cut into cubes
1 Green chilli cut into pieces
2 tbsp Greeen Peas
1/4 cup Spinach chopped
( Use any vegetables as per required)
2 tbsp Biriyani Masala
1/4 tsp Turmeric powder
Salt to taste
Few Strands of Saffron
1/2 cup Milk
1 cup Curd
1 tbsp Onion paste
1 tbsp Tomato paste
1/2 tsp Ginger paste
1 Garlic paste
2 Cloves
1 Cardomon
1 small stick Cinnamon
2 Bay leaves
1/4 tsp Cumin seeds
1/2 Onion sliced and dry Roasted
1 tbsp Coriander leaves

Method
Take the curd, add tomato paste, onion paste, garlic paste and ginger paste and mix it. Keep it aside. Take rice, add 2 cups of water and keep it to cook. Add whole cardamom, 1 bay leaf, cinnamon and cloves. When the rice is almost done.. Add the saffron in the milk, mix it and add it to the rice. Cook it the rice is done. Keep it aside. Take a wok. Add cumin seeds and 1 bay leaf. Dry roast the cumin seeds. Add the curd mixed with all the paste. On a low flame cook the curd and the paste for 2 minutes.  Add the biriyani masala, turmeric powder and salt to taste. Cook for few minutes. Add all the vegetables and chilli. Stir the vegetables. Cook on low flame till the vegetables are 1/2 cooked.. If water is required then add little water while cooking. Take a pot. Add the vegetables in the pot. Add the layer of rice... Sprinkle roasted onions and coriander leaves and cook it for 10 minutes in the dum... Serve hot with carrot, cucumber and mint raita.
P.S. If on a restricted diet then cook the vegetables separately and while serving measure the quantity of the vegetables, put it on a plate and then measure the rice quantity required and add it on top of the vegetables.

Biriyani Masala
Ingredients
1/2 tsp Turmeric powder
4 Cloves
2 Green Cardomom
1 small stick Cinnamon
2 Pinch grated Nutmeg
1/4 tsp Mace
6 Pepper corn
1 tbsp Coriander seeds
1/2 tbsp Cumin seeds
1 Star anise
1 Marathi moggu
1 Bay leaf

Method
Grind all the above ingredients into powder.

Carrot, Cucumber and Mint Raita
Ingredients
1 cup beaten Curd
1 small Carrot grated
1 small Cucumber grated
Few Mint leaves chopped
2 Pinch of Chat Masala

Method
Mix all the above ingredients together to serve with the biriyani...

Adraki Roast Chicken Legs..
Ingredients
4 pieces of Chicken legs
1/2 tsp Ginger paste
1/4 tsp Chilli paste
1/2 tsp Onion paste
1/4 tsp Lime juice
1/2 tsp
Salt to taste

Method
Take a pan, marinate the chicken with all the above ingredients for 30 minutes. Take a pot add 1/2 cup water and cook the chicken legs till tender and the water has dried up. If required add more water to cook the chicken. Don't over cook the chicken. Take a non stick pan. Add the chicken legs and roast the chicken from all sides... It can be done on a charcoal  or a oven too... In a oven just roast it till brown for 15 minutes at 200 degrees Celsius in a pre heated oven as the chicken is already cooked.

P.S. Rock salt is best to use... Adjust salt as per the diet plan...

Ingredients
1 cup boiled Tuna
1/4 cups Oats
2 tbsp Curd
1/4 tsp Garlic paste
1/2 cup Cabbage sliced
1 Onion sliced
1 red or green chilli chopped
2 tbsp Celery leaves chopped
Salt to taste
1/2 tsp Pepper powder
Olive oil spray

Method
Mix all the above ingredients except oil in a blender.  Take a portion of the tuna mixture. Flatten the mixture and give it a round shape. Take a grill pan and spray oil. Grill the tuna patties from both the sides. Serve hot with salad.

Healthy Dahiwala Chicken Drumstick Grilled
Ingredients
8 to 10 Chicken legs
1 tbsp Garlic paste
1 tsp Chilli paste
2 tbsp Coriander paste
1 tbsp Mint paste
1/4 Cup Curd
Salt to taste
1/2 tsp Cumin seeds

Method
Take a mixing bowl. Add all the above ingredients. Marinate the leg pieces for 3 hours. Take a baking tray. Arrange the leg pieces. Add the the marinated juices. Grill it for 15 minutes at 200 degree celcius. Turn the chicken and grill again for 15 minutes. Turn again and grill it for 5 minutes. Turn once more for 5 minutes till all the juices are well cooperated with the chicken. Serve hot.

Garlicky Stirred fried Squid
Ingredients
1 cup Squid cut into pieces
1 tsp Garlic minced
1 Dry Red chilli cut into pieces
1 Onion cut into cubes
Salt to taste
1/2 tsp Pepper corn
1/2 tbsp Oilve oil

Method
Take oil in a wok. Let it heat. Add the garlic and chilli. Sauté for few minutes. Add the onions and sauté till translucent in colour. Add the squids, salt and pepper powder. Stir fry till the squids are cooked. Serve hot.

Bottle Gourd Savoury Muffins


Bottle Gourd Savoury Muffins

This is my winning recipe in a contest conducted by Mumbai Chapter Indian Food Freak.... 

Ingredients
4 Eggs
1 cup Grated Bottle Gourd along with the skin
1 small Onion minced
2 Green chillies minced
1/4 tsp Ginger grated
1/4 tsp Garlic grated
1/4 cup +  2 tbsp Whole wheat
1/2 tsp Baking Powder
1 tsp Olive oil
1/2 tsp Pepper powder
Salt to taste

Method
Take the eggs. Very gently with a metal skewer, prick one end of the egg and make a hole. Take a mixing bowl, pour out the yolk and the egg whites in the mixing bowl and wash the egg shells very gently. Remove the water out and keep it under the fan to dry. Mean while add all the above ingredients in the mixing bowl except 2 tbsp flour. Mix it well. The batter has to be thick dropping consistency.  If required add 2 tbsp flour. Take a 6 cavity cupcake mould. Take a piece of foil paper and adjust the foil in the cup cake cavity, so that the egg shell can sit well. 


Repeat the process for other cavities also. Spray the inner side of the egg shells with oil. Pour the batter in the egg shell filling 2/3 of the egg shell. The remaining batter can be poured into the greased cup cake cavities or turned into an egg Paratha. Bake the muffins at 160 degrees celcius for 35 to 40 minutes. To check insert a tooth pick. If the tooth pick comes out clean then the muffins are done. 


Remove it from the oven and cool the muffins before peeling the egg shell out. Enjoy the Bottle Gourd Savoury Muffins with Tea... The remaining batter can be used in making cup cake muffins and parathas.

Pizza Cake

Pizza Cake


For Pizza Dough
Ingredients
2 cups All purpose flour
Salt to taste
2 tsp Dry Yeast
1 tsp  Sugar
1/4 cup Lukewarm Water
2 tbsp Olive oil

Method
Take a mixing bowl. Mix Flour and Salt. Take Lukewarm water. Add sugar and yeast. Let it rise. Add the yeast water and extra water little at a time to make a dough. Knead the dough for 10 minutes. Add 1 tbsp oil and stretch the dough while kneading. Apply oil on the dough and let it rise double in size. Punch the dough and let it rest for 30 minutes.

For the filling and topping
Ingredients
1 small Onion
1 small Tomatoes
4 Mushrooms
Few cubes of each Green, Yellow and Red Capsicum
(All the vegetables cut into medium sized cubes)
1/4 cup or More Chicken sausages, Cooked Minced meat, Pepporoni, Cooked/ Boiled/ Roasted Boneless Chicken medium size cubes - Any Meat (Optional)
Dry Oregano and Chilli flakes (optional)

Method
Add all the ingredients for the filling and topping in a chopper and mince all the ingredients together.

Pizza Cake
Ingredients
Pizza dough
1/4 cup Pizza Sauce
Vegetable and meat mince
1/4 Cup grated Mozzarella, Cheddar and Processed Cheese. Equal portion of Mozzarella, Cheddar and Processed cheese to be taken.

Method
Mix all the above ingredients except the bread dough. Grease a square 7 inches Spring Form Pan.Take the bread dough. Flatten the dough. Take 4 tbsp of the vegetable and meat mince, add it in the centre of the dough. Take the edges of the dough and close the filling. Place the dough on the baking tin, close end facing down wards. Let the dough rise. Add the rest of the vegetable and meat mince on the top of the dough. Bake at 160 degrees for 40 minutes till the cheese has melted and the bread has cooked in an preheated oven. Let it cool and then take the bread out from the pan.  Cut into pieces and serve.

Healthy Tikki Burger

Who said Burgers are not Healthy... Here is my recipe of Healthy Tikki Burger right from the  scratch...



Healthy Tikki Burger
Ingredients 
6 Multi Grain Buns
6  Veg OR Fish Tikki 
Avocado Yogurt Dip
1 Onion Sliced
1 Tomato Sliced
1 Cucumber or Zucchini  Thin Slices lengthwise
1 Carrot Thin Slices lengthwise 
Lettuce Leaves 
Cheese slices (optional)

Method
Cut the buns into half. Take the lower portion of the bun. Add lettuce leaf, cumcumber, carrot, fish Tikki, Avocado yogurt dip, onion slice, tomato slice and cheese slice. Cover it with the top portion of the bun... Ready to enjoy the healthy treat...

Multi grain Buns
Ingredients
3 cups All purpose flour
1/2 cup Whole wheat flour
1/4 cup Soya flour
1/4 cup Amarnath flour
1/4 cup Nachni flour
1/4 cup Jowari flour
1/4 cup Bajri flour
1 1/2 tbsp Dry Yeast
2 tbsp Sugar
1/2 cup Lukewarm water
1 1/2 tbsp Olive oil
Salt to taste
Milk wash + Butter wash

Method
Take a cup. Add the sugar, yeast and Luke warm water, let it rise. Take a mixing bowl. Add all types of flours and salt. Mix it. Make a well in the centre of the flour. Add the yeast. Stir the yeast and start mixing the flour... Add the water little at a time to make a soft dough. Add 1 tbsp oil, Knead the dough for 10 minutes. Drizzel some oil on top of the dough, cover and keep for rising double in size. Punch the dough and knead it again for sometime. Divide the dough into equal proportions. Grease the baking tray.  Rub some oil on the palms. Take one portion of the dough. Roll the dough giving it a round shape. Place each buns on the baking tray at some distance. Spray with water and cover with soft Malmal cloth till it rises double in size. Brush it with milk + butter wash. Bake it in a pre heated oven at 180 degrees celcius for 25 minutes or till brown on top. Optional brush butter on top. Cool the buns a bit and remove it from the tray.


Fish Tikki
Ingredients
750 grams Bassa fish boiled and mashed
4 Midium Potatoes cut into half, boiled
1 Onion chopped
2 Green chillies chopped
1 tsp  Ginger grated
1 tsp Garlic grated
Salt to taste
1/2 tsp Pepper powder
1/2 Cumin powder
1 pinch Nutmeg powder
2 pinch Cinnamon powder
2 pinch Clove powder
1/4 tsp Lime juice
1 Egg yolk
1 tbsp Parsley chopped
2 tbsp Oil

Method
Take a wok. Add 1 tbsp oil. Add onion, chillies, ginger and garlic. Sauté it for few minutes till the onions becomes translucent. Add the fish, salt, pepper, nutmeg, cinnamon, cloves, cumin powder and lime juice. Mix it and stir for 2 minutes. Add the potatoes and mash it along with the fish. Switch off the gas. Add parsley leaves and egg yolk. Mix it well. Let the mixture cool. Apply oil on the palms. Make equal portion of the mixture. Take one portion and make a ball. Flatten the ball. Repeat the same process with the rest of the Tikkis. Take a grill pan. Drizzel some oil. Grill the Tikkis until brown from both the side. Serve hot.

Veg Tikki
Ingredients
1 Cup Soya mince boiled and water squeezed out
1/2 Cup Cottage cheese / Paneer Mashed
1/4 Cup Mix Veg finely Minced ( Carrot, Capsicum, grated beetroot and Few peas)
4 Medium Potatoes cut into half, boiled
1 Onion chopped
2 Green chillies chopped
1 tsp  Ginger grated
1 tsp Garlic grated
Salt to taste
1/2 tsp Pepper powder
1/2 Cumin powder
2 pinch Cinnamon powder
2 pinch Clove powder
1/4 tsp Lime juice
1 tbsp Parsley chopped
2 tbsp Oil

Method
Take a wok. Add 1 tbsp oil. Add onion, chillies, ginger and garlic. Sauté it for few minutes till the onions becomes translucent. Add the paneer, soya kheema,vegetables, salt, pepper, cinnamon, cloves, cumin powder and lime juice. Mix it and stir for 2 minutes. Add the potatoes and mash it along with the vegetable mixture. Switch off the gas. Add parsley leaves. Mix it well. Let the mixture cool. Apply oil on the palms. Make equal portion of the mixture. Take one portion and make a ball. Flatten the ball. Repeat the same process with the rest of the Tikkis. Take a grill pan. Drizzel some oil. Grill the Tikkis until brown from both the side. Serve hot.


Avacado Yogurt Dip
Ingredients
1 Avocado chopped
1/2 cup Hung Yogurt
1 Green Chilli
4 Garlic cloves
1 Dry Red Chilli
1/2 tsp Lime juice
1 tsp Olive Oil
Salt to taste
Dry Oregano and Chilli flakes seasoning

Method
Add all the above ingredients in the blender except for the Dry Oregano and Chilli flakes seasoning. Blend the ingredients into a smooth paste. Season with Dry Oregano and Chilli flakes.
