Pissaladière is a classic dish in Provence

Pissaladière is a classic dish in Provence ( South east France). Its thin pizza-like crust is piled high with caramelized onions, then topped with anchovies ( Optional), olives, and fresh herbs.

Ingredients

Topping
1/4 cup butter
3 big  onions thinly sliced
6 fresh thyme sprigs
4 fresh rosemary sprigs
2 bay leaves
6 tbsp extra-virgin olive oil
Salt to taste

For the base
1 cup warm water
1 tbsp dry yeast
1 tsp sugar
3cups (or more) all purpose flour
1 tsp salt
3 tbsp extra-virgin olive oil
20 drained anchovy fillets ( optional)
20  black olives pitted
1 tablespoon chopped fresh thyme

Method

For topping:
Preheat oven to 180 degress. Place butter on heavy large  baking sheet; place in oven until butter melts, about 5 minutes. Spread half of onions on baking sheet; top with 3 thyme sprigs, 2 rosemary sprigs and 1 bay leaf. Sprinkle with salt. Drizzle with 3 tablespoons oil. Top with remaining onions, 3 thyme sprigs, 2 rosemary sprigs, and 1 bay leaf. Sprinkle with salt. Drizzle with 3 tablespoons oil (onion layer will be thick but will settle during baking). Bake until onions are very tender and golden, stirring and turning every 30 minutes, about 2 hours total. Cool. Discard herb sprigs and bay leaves. (Can be made 1 day ahead. Cover; chill. Bring to room temperature before using.)

For base:
Pour 1 cup warm water into small bowl; sprinkle yeast and sugar over. Stir to blend. Let stand until foamy, about 10 minutes.
Blend 2 3/4 cups flour and salt in processor. Add yeast mixture and 2 tablespoons oil; process until dough clumps together, adding more flour by tablespoonfuls if dough is sticky. Process until shiny ball forms, about 1 minute. Turn dough out onto floured work surface and knead until smooth and elastic, about 5 minutes. Coat large bowl with remaining 1 tablespoon oil. Add dough to bowl; turn to coat with oil. Cover with plastic wrap, then kitchen towel. Let rise in warm area until doubled in volume, about 1 1/2 hours. Punch down dough; cover and let rise until puffed and almost doubled, about 1 hour.

Grease the baking sheet with oil. Roll out dough on lightly floured surface  rectangle shape and to the size of the tray. Transfer to prepared baking sheet; press edges of dough up along sides and corners of sheet. Cover with dry kitchen towel; let rise until slightly puffed, 1 hour.
Preheat oven to 250 degrees. Spread onions over top of dough. Arrange anchovies ( optional ) and olives on top. Bake until the base
is golden, about 15 minutes. Sprinkle with thyme. Cut into 3-inch squares. Serve warm or at room temperature.

Whole wheat, Nachni and Soya Bread Loaf

Whole wheat, Nachni and  Soya  Bread Loaf
Ingredients
3 cup Whole wheat flour
1/2 cup Soya flour
1/2 cup Nachni flour
1/4 cup All Purpose flour
1 1/2 tbsp Dry Yeast
2 tbsp Sugar
1/2 cup Lukewarm water
1 tbsp Olive oil
Salt to taste

Method
Take a cup. Add the sugar, yeast and Luke warm water, let it rise. Take a mixing bowl. Add all types of flours and salt. Mix it. Make a well in the centre of the flour. Add the yeast. Stir the yeast and start mixing the flour... Add the water little at a time to make a soft dough. Add 1 tbsp oil, Knead the dough for 10 minutes. Drizzel some oil on top of the dough, cover and keep for rising double in size. It takes 3 hours to rise. Punch the dough and knead it again for few seconds. Grease a bread tin. Place the dough in the bread tin. Let it rise double in size.  Bake it in a pre heated oven at 160 degrees celcius for 25 to 30 minutes or till brown on top.Cool the bread loaf a bit and remove it from the tray. Cool it completely before cutting.... Give at least 3 hours to cool down since it is a bit heavy bread.

Multi grain Round Focaccia Bread

Multi grain Round Focaccia Bread
Ingredients
3 cup Whole wheat flour
1/4 cup Soya flour
1/4 cup Amarnath flour
1/4 Jowari flour
1/4 cup All Purpose flour
1/2 cup Nachni flour
2 tsp Dry Yeast
1 tbsp Sugar
1/2 cup Lukewarm water
1/2 cup or more Milk  / Water as required
Few sliced Black Olives
1 Coriander / Parsly Strand
3 Cherry Tomatoes
2 tbsp Olive oil
Salt to taste

Method
Take a cup. Add the sugar, yeast and Luke warm water, let it rise. Take a mixing bowl. Add all types of flours and salt. Mix it. Make a well in the centre of the flour. Add the yeast. Stir the yeast and start mixing the flour... Add the milk little at a time to make a soft dough. Add 1 tbsp oil, Knead the dough for 10 minutes. Give the dough a round shape. Drizzel some oil on top of the dough, cover and keep it for 10 hours.Grease a round baking tin. Gently press the dough in the round tin. Gently poke the top with finger tips. Keep it for 30 minutes in the tin.  Add olives, coriander and tomatoes on the top for garnishing. Drizzel olive oil on top. Bake it in a pre heated oven at 180 degrees celcius for 30 minutes or till brown on top.Cool the bread loaf a bit and remove it from the tray. Cool it completely before cutting.... Give at least 3 hours to cool down before cutting.

P.S. Minced garlic, spring onions, chillies, dry herbs can be added while kneading the bread...

Pizza Cake

Pizza Cake


For Pizza Dough
Ingredients
2 cups All purpose flour
Salt to taste
2 tsp Dry Yeast
1 tsp  Sugar
1/4 cup Lukewarm Water
2 tbsp Olive oil

Method
Take a mixing bowl. Mix Flour and Salt. Take Lukewarm water. Add sugar and yeast. Let it rise. Add the yeast water and extra water little at a time to make a dough. Knead the dough for 10 minutes. Add 1 tbsp oil and stretch the dough while kneading. Apply oil on the dough and let it rise double in size. Punch the dough and let it rest for 30 minutes.

For the filling and topping
Ingredients
1 small Onion
1 small Tomatoes
4 Mushrooms
Few cubes of each Green, Yellow and Red Capsicum
(All the vegetables cut into medium sized cubes)
1/4 cup or More Chicken sausages, Cooked Minced meat, Pepporoni, Cooked/ Boiled/ Roasted Boneless Chicken medium size cubes - Any Meat (Optional)
Dry Oregano and Chilli flakes (optional)

Method
Add all the ingredients for the filling and topping in a chopper and mince all the ingredients together.

Pizza Cake
Ingredients
Pizza dough
1/4 cup Pizza Sauce
Vegetable and meat mince
1/4 Cup grated Mozzarella, Cheddar and Processed Cheese. Equal portion of Mozzarella, Cheddar and Processed cheese to be taken.

Method
Mix all the above ingredients except the bread dough. Grease a square 7 inches Spring Form Pan.Take the bread dough. Flatten the dough. Take 4 tbsp of the vegetable and meat mince, add it in the centre of the dough. Take the edges of the dough and close the filling. Place the dough on the baking tin, close end facing down wards. Let the dough rise. Add the rest of the vegetable and meat mince on the top of the dough. Bake at 160 degrees for 40 minutes till the cheese has melted and the bread has cooked in an preheated oven. Let it cool and then take the bread out from the pan.  Cut into pieces and serve.

Healthy Tikki Burger

Who said Burgers are not Healthy... Here is my recipe of Healthy Tikki Burger right from the  scratch...



Healthy Tikki Burger
Ingredients 
6 Multi Grain Buns
6  Veg OR Fish Tikki 
Avocado Yogurt Dip
1 Onion Sliced
1 Tomato Sliced
1 Cucumber or Zucchini  Thin Slices lengthwise
1 Carrot Thin Slices lengthwise 
Lettuce Leaves 
Cheese slices (optional)

Method
Cut the buns into half. Take the lower portion of the bun. Add lettuce leaf, cumcumber, carrot, fish Tikki, Avocado yogurt dip, onion slice, tomato slice and cheese slice. Cover it with the top portion of the bun... Ready to enjoy the healthy treat...

Multi grain Buns
Ingredients
3 cups All purpose flour
1/2 cup Whole wheat flour
1/4 cup Soya flour
1/4 cup Amarnath flour
1/4 cup Nachni flour
1/4 cup Jowari flour
1/4 cup Bajri flour
1 1/2 tbsp Dry Yeast
2 tbsp Sugar
1/2 cup Lukewarm water
1 1/2 tbsp Olive oil
Salt to taste
Milk wash + Butter wash

Method
Take a cup. Add the sugar, yeast and Luke warm water, let it rise. Take a mixing bowl. Add all types of flours and salt. Mix it. Make a well in the centre of the flour. Add the yeast. Stir the yeast and start mixing the flour... Add the water little at a time to make a soft dough. Add 1 tbsp oil, Knead the dough for 10 minutes. Drizzel some oil on top of the dough, cover and keep for rising double in size. Punch the dough and knead it again for sometime. Divide the dough into equal proportions. Grease the baking tray.  Rub some oil on the palms. Take one portion of the dough. Roll the dough giving it a round shape. Place each buns on the baking tray at some distance. Spray with water and cover with soft Malmal cloth till it rises double in size. Brush it with milk + butter wash. Bake it in a pre heated oven at 180 degrees celcius for 25 minutes or till brown on top. Optional brush butter on top. Cool the buns a bit and remove it from the tray.


Fish Tikki
Ingredients
750 grams Bassa fish boiled and mashed
4 Midium Potatoes cut into half, boiled
1 Onion chopped
2 Green chillies chopped
1 tsp  Ginger grated
1 tsp Garlic grated
Salt to taste
1/2 tsp Pepper powder
1/2 Cumin powder
1 pinch Nutmeg powder
2 pinch Cinnamon powder
2 pinch Clove powder
1/4 tsp Lime juice
1 Egg yolk
1 tbsp Parsley chopped
2 tbsp Oil

Method
Take a wok. Add 1 tbsp oil. Add onion, chillies, ginger and garlic. Sauté it for few minutes till the onions becomes translucent. Add the fish, salt, pepper, nutmeg, cinnamon, cloves, cumin powder and lime juice. Mix it and stir for 2 minutes. Add the potatoes and mash it along with the fish. Switch off the gas. Add parsley leaves and egg yolk. Mix it well. Let the mixture cool. Apply oil on the palms. Make equal portion of the mixture. Take one portion and make a ball. Flatten the ball. Repeat the same process with the rest of the Tikkis. Take a grill pan. Drizzel some oil. Grill the Tikkis until brown from both the side. Serve hot.

Veg Tikki
Ingredients
1 Cup Soya mince boiled and water squeezed out
1/2 Cup Cottage cheese / Paneer Mashed
1/4 Cup Mix Veg finely Minced ( Carrot, Capsicum, grated beetroot and Few peas)
4 Medium Potatoes cut into half, boiled
1 Onion chopped
2 Green chillies chopped
1 tsp  Ginger grated
1 tsp Garlic grated
Salt to taste
1/2 tsp Pepper powder
1/2 Cumin powder
2 pinch Cinnamon powder
2 pinch Clove powder
1/4 tsp Lime juice
1 tbsp Parsley chopped
2 tbsp Oil

Method
Take a wok. Add 1 tbsp oil. Add onion, chillies, ginger and garlic. Sauté it for few minutes till the onions becomes translucent. Add the paneer, soya kheema,vegetables, salt, pepper, cinnamon, cloves, cumin powder and lime juice. Mix it and stir for 2 minutes. Add the potatoes and mash it along with the vegetable mixture. Switch off the gas. Add parsley leaves. Mix it well. Let the mixture cool. Apply oil on the palms. Make equal portion of the mixture. Take one portion and make a ball. Flatten the ball. Repeat the same process with the rest of the Tikkis. Take a grill pan. Drizzel some oil. Grill the Tikkis until brown from both the side. Serve hot.


Avacado Yogurt Dip
Ingredients
1 Avocado chopped
1/2 cup Hung Yogurt
1 Green Chilli
4 Garlic cloves
1 Dry Red Chilli
1/2 tsp Lime juice
1 tsp Olive Oil
Salt to taste
Dry Oregano and Chilli flakes seasoning

Method
Add all the above ingredients in the blender except for the Dry Oregano and Chilli flakes seasoning. Blend the ingredients into a smooth paste. Season with Dry Oregano and Chilli flakes.

Pizza Dough

Ingredients
500 grams All purpose flour
Salt to taste
1 tbsp Dry Yeast
1 tbsp Sugar
1/4 cup Lukewarm Water
2 tbsp Olive oil

Method
Take a mixing bowl. Mix Flour and Salt. Take Lukewarm water. Add sugar and yeast. Let it rise. Add the yeast water and extra water little at a time to make a dough. Knead the dough for 10 minutes. Add 1 tbsp oil and stretch the dough while kneading. Apply oil on the dough and let it rise double in size. Punch the dough and make equal portion of the dough, size of a big lemon. Let it rest for 30 minutes.

For A Quick Spicy Pizza Sauce

Ingredients
6 Ripe Tomatoes cut in to big cubes and seeds removed
4 Dry Red chillies
6 Garlic cloves peeled
Salt to taste
1 tbsp Sugar
6 Basil leaves
1 cup Tomato purée
1 tbsp Olive oil

Method
Take all the above ingredients except tomato purée and Coarsely grind the tomatoes into paste. Take a pan. Add the tomato paste and purée with 1/2 cup of water and let it simmer on low flame till the sauce reduces a bit and becomes thick and all the ingredients has incorporated well. Switch of the flame and keep it aside.

For the Pizza Filling

Ingredients
Pizza dough
2 Onion
3 Tomatoes
1 packet Mushrooms
1 of each Green, Yellow and Red Capsicum
(All the vegetables cut into medium sized cubes)
Pizza Sauce
2 tbsp Black Olives sliced
2 Cup or more grated Mozzarella, Cheddar and Processed Cheese. Equal portion of Mozzarella, Cheddar and Processed cheese to be taken.
1 cup or More Chicken sausages, Cooked Minced meat, Pepporoni, Cooked/ Boiled/ Roasted Boneless Chicken medium size cubes - Any Meat (Optional)
Dry Oregano and Chilli flakes (optional)

Method
Take one portion of the dough and roll it around 6 inch in circle.
To make it more cheesy.... Add grated cheese as stuffing in the dough and then roll the dough out..... OR....... Roll out 2 circles. Add and spread cheese spread or add cheese slices on one dough circle, cover the cheese spread or cheese slices  with another dough circle. Seal the edges.
Grease the baking tray. Keep the pizza based in the baking tray. With a help of a fork poke few time on the dough. Add and spread the pizza sauce on the dough. Then add the grated  cheese. Then add the vegetables, Olives and meat one by one. Add the cheese again and bake at 180 degrees for 15 to 20 minutes till the cheese has melted and the pizza bread has cooked in an preheated oven. Serve hot with chilli flakes and dry oregano (Optional)

Artisan Multi Grain Bread

Artisan Multi Grain Bread
For the Starter
Ingredients
1/2 cup Gram flour
1/2 cup of Warm Water
1 tsp of Instant Yeast
1/2 tsp Sugar

Method
Mix all the ingredients together and keep it for 8 hours..

For the Multi Grain Bread
Ingredients
2 cup Whole Wheat flour
1/2 cup All purpose flour
1/4 cup Gram flour
1/4 cup Oats
1/4 cup Brown Beaten Rice
1/4 cup Semolina
1 tbsp Flaxseed
1 tbsp Black Sesame seeds
1 tsp Instant Yeast
Salt to taste
Multi grain mix (2 pinch of Black sesame seeds and Flaxseed,  sunflower seeds and pumpkin seeds)
** I did not have Sunflower and Pumpkin seeds

Method
Combine all the dry ingredients together in a bowl. Add the gram flour water. Mix and knead the dough. If required add more water little at a time. Knead the dough for 10 minutes, it should be smooth and elastic.  Cover the bowl and let the dough rise  till it doubles in size, this will take 2 to 4 hours. Punch the dough and knead for few minutes. Dust the bread mould with some wheat flour, Shape the dough and place the dough in the bread mould. Sprinkle some wheat flour and oats on top. Sprinkle the multi grain mix.  Cover with a towel and let it rise. It will take 2 or more hours. Preheat the oven to 200 degrees celcius.  After the second rise, slash the dough 3 times with a  sharp knife. Bake for 30 minutes.  Reduce the temperate to 180 degrees celcius and continue baking till done, for 15  minutes. Cool the bread completely before cutting.

Pane di Patate

Pane di patate Bread is made with mashed potato has a soft crust and moist center. In this recipe, the dough is coated in butter and baked in a ring mold.

Pane di Patate

Special equipment:
Ring mold or 10inch round
cake pan, with 250m ramekin

Ingredients:
250g potatoes, peeled
and cut into 2–3 pieces
2 1⁄2 tsp dried yeast
9 tbsp unsalted butter,
plus extra for greasing
1 large bunch of chives, snipped
2 tbsp sugar
2 tsp salt
21⁄4 cups bread flour,
plus extra for dusting

Method:
Place the potatoes in a saucepan with plenty of cold water. Bring to a boil and simmer until tender. Drain, reserving 1 cup of the cooking liquid. Mash with a potato masher. Let cool.
In a small bowl, sprinkle the yeast over 1⁄4 cup lukewarm water. Leave for 5 minutes until dissolved, stirring once. Melt half the butter in a saucepan. Put the reserved liquid, mashed potato, dissolved yeast, and melted butter into a large bowl. Add the chives, sugar, and salt, and mix together with your hand.
Stir in half the flour and mix well with your hand. Add the remaining flour, 1⁄2 cup at a time, mixing well after each addition, until the dough pulls away from the sides of the bowl. It should be soft and slightly sticky. Turn the dough onto a floured work surface. Knead for 5–7 minutes, until very smooth and elastic.
Grease a large, clean bowl. Put the dough in the bowl and flip it so the surface is lightly buttered. Cover with a damp kitchen towel and let the dough rise in a warm place for 1–1 1⁄2 hours, until doubled in size.
Grease the ring mold or cake pan. If using a pan, grease the outside of the ramekin and place it upside down in the center. Melt the remaining butter. Turn the dough out onto a lightly floured work surface and knock back. Cover and let rest for 5 minutes. Flour your hands and pinch off walnut-sized pieces of dough, making about 30 pieces. Roll each piece of dough into a smooth ball.
Put a few balls into the dish of melted butter and turn them with a spoon until coated. Transfer the balls of dough to the prepared mold or pan. Repeat with the remaining dough. Cover with a dry kitchen towel and let the loaf rise in a warm place for 40 minutes, until the mold or pan is full.
Preheat the oven to 190 degrees. Bake the bread for 40–45 minutes, until it is golden brown and starts to shrink away from the mold. Let it cool slightly on a wire rack, then carefully unmold. With your fingers, pull the bread apart while still warm.

Laccha paratha

Laccha paratha
Ingredients
2 1/2 cup flour
1 tbsp oil
Salt to taste
Ghee for making the parathas

Method
Take the flour,salt and oil. Mix it well. Add water to make a dough. Keep the dough covered for an hour. Make medium size balls. Take a ball and roll the dough out. Apply oil or ghee and sprinkle flour on the rolled dough. Now start folding like paper fan. Now roll the dough strip to round shape. Apply little flour and roll out the paratha. Put the paratha on a hot tawa. Roast on both the sides and apply ghee. Lachha paratha is ready.

Rustic Ciabatta bread with Poolish(Starter)...

Cheesy Herb Bread
Ingredients
1 Fresh Ciabatta
2 tbsp Butter
2 tbsp Oilve oil
2 tbsp grated Cheddar cheese
2 tbsp Grated Mozzarella
2 garlic clove minced
1/4 cup Mix chopped Fresh herbs ( Coriander leaves, Rose Mary, Thyme, Chives )
1/2 tbsp Chilli flakes
1/4 tbsp Pepper powder
Salt to taste

Method
Take a mixing bowl. Add the butter, olive oil, Mix herbs, garlic, cheddar cheese, mozzarella, chilli flakes, Pepper powder and salt. Mix it well. Take the ciabatta and slice the ciabatta half way through into thick slices, (don't slice it completely so that the whole ciabatta remains together). Spread the cheesy herb butter in between bread slices.  Wrap ciabatta in foil and bake for 15 minutes at 180 degrees in a pre heated oven or until butter is melted. Remove from the oven and serve immediately.

Multi Grain Buns

Multi Grain Buns 
Ingredients 
2 1/2 cup All purpose flour 
1/2 cup Wheat flour
1/4 cup Oats
1/2 tbsp Flaxseed powder 
1 1/2 tbsp Dry Yeast
1 tbsp Sugar 
1/2 Cup Lukewarm Water + More water 
1 tbsp Olive oil 
Salt to taste
2 tbsp multi grain mix - Black and white Sesame seeds, Flaxseed and Oats
Egg wash  OR Milk wash + Butter wash

Method
Take a mixing bowl. Add all the APF, Wheat flour, Oats and Flaxseed powder and mix it together. Make a well in the centre of the flour. Add sugar, yeast and 1/2 cup lukewarm water. Stir the yeast, sugar and water with out disturbing the surrounding flour. Cover and let the yeast rise. Start mixing the flour... Add the remaining water little at a time and salt  to make a soft dough. Add 1/4 tbsp oil, Knead the dough for 5 minutes adding 1/4 tbsp oil in between. Rub some oil on top, cover and keep overnight. Rub some oil on the palms. Sprinkle some flour on the platform, take the dough, punch it and knead it again for sometime. Divide the dough into equal proportions. Grease the baking tray.  Rub some oil on the palms. Take one portion of the dough. Roll the dough giving it a round ball shape. Place each buns on the baking tray at some distance. Sprinkle the multi grain mix on the bun. Spray with water and cover with soft Malmal cloth till it rises double in size. Brush it with egg wash or milk + butter wash. Bake it in a pre heated oven at 180 degrees celcius for 25 minutes or till brown on top. Optional brush butter on top. Cool the buns a bit and remove it from the tray.

Sourdough bread recipe

To make multi grain sour dough
250 grams of multi grain mix
500 grams of flour + extra flour to dust
2 tbsp salt
2 tbsp olive oil
Method
Mix the starter with all the above ingredients except for the 500 grams of flour and leave it to rise over night.
Next morning sprinkle some flour on your working area and take the dough and keep folding with your hands gently. At this stage the dough is very sticky so as you are working take the remaining flour and little by little as much requiered and keep adding the the mixture and keep folding the dough with your hands till you are able the handle the dough easily. Now take a tbsp of olive oil and apply it to the vessel. Lift the dough and keep it in the vessel and apply some olive oil from top.
Cover it and leave it for 2 hours. Sprinkle some more flour on your working area and take the dough and very gently cut the dough in to parts as required. The rest of the dough can be kept in an air tight container. Now the cut parts of the dough which can be shaped in to desired sizes and design. To make scored bread cut the resting dough from top to make diffrent designs. Grease the tray and sprinkle some flour. And keep the shaped dough in the tray and rest it for 30 minutes.  Preheat the oven at 200 degrees with a empty vessel inside. Add water in the small container which was preheated and keep it in the oven to retain moisture. Keep the tray to bake for 30 minutes.

Fish bread with fish filling

For the fish filling
Ingredients
500 grams basa or any boneless fish
2 onions sliced finely
1/2 tsp garlic
1 green chilli chopped
1/2 tsp garam masala powder
1 potato boiled and grated
1 tsp lime juice
Salt and pepper to taste
1 tbsp oil

Method
Steam the fish and mash it. Take a pan and  add the oil. Add garlic and onions and sauté it till the onions changes it's colour. Add chopped chillies, salt and pepper to taste, garam masala powder, boiled grated potatoes and fish. Stir fry it and combine all the ingredients well. Add lime juice and mix it. Keep it aside.

For the bread
3 cups of wheat flour
Salt to taste
1 tsp instant yeast
1 tbsp oil
Luke warm water

Method
Take  wheat flour, yeast and salt and kneading the dough with Luke warm water forming a soft dough. Add oil to the dough and knead again and keep for rising till it doubles.

Method
Preheat the oven at 200 degrees.
Knead the dough again and make balls, take one ball and roll it out. Cut the sides,  keeping space in the centre for the filling.  Put the filling in the centre. Then start braiding, over lapping each strip over each other.  For the eyes put pepper corn. Spray water and oil mix on the fish.  Keep it for 10 to 15  minutes covered. Apply egg spread and bake for 20 minutes at 200 degrees.

Mini Cheese Margherita Pizza

Mini Cheese Margherita Pizza
Ingredients
2 cup Wheat flour 

1 1/2 cups   All purpose flour 

9 grams Dry Yeast

1 tsp Sugar

1/4 cup Luke warm Water

Salt to taste

1cup grated Mozzarella 

1/2 cup grated Cheddar Cheese 

1 cup Pizzasauce

2 Tomato chopped 

1/4 cup Basil leaves chopped 

2 tbsp Olive oil 


Method
Pre heat the oven to 180 degrees celcius.
Add wheat flour, All purpose flour, salt in a bowl, mix it and keep it aside. Take lukewarm water and add sugar and yeast. Let it rise. Add the yeast water and more water if required little at a time to the flour. Mix it and knead it into a soft dough. Add 1/2 tbsp olive oil, cover and let it rise. Punch the dough and divide the dough in to 2 portions. Take one portion of the dough. Sprinkle some flour on the platform and roll the dough out. Take a cookie cutter and cut out in to round disc shape. Repeat the process till the dough is over. Grease a baking tray with oil. Arrange the cut out dough on the tray. Take a fork and prick on the cut out dough. Add 1 tbsp spoon of mozzarella and cheddar mix. Add the tomato and basil leaves, add a tbsp of pizza  sauce and again top it up with cheese.  Bake for 15-20 mins at 180 degrees celcius till the bread has become brown from the sides and cheese has melted on top.  Serve hot..

Option - Add chopped onions and capsicum to make vegetable pizza..

Italian Tomato Mozzarella Crostini made with Ciabatta Bread....

Italian Tomato Mozzarella Crostini made with Ciabatta Bread.... 
Ingredients
12 Ciabatta bread slices
12 strips Of fresh Mozzarella
2 Tomatoes cut into half and sliced
2 Onion cut into half and sliced
Olive oil
Dry Orageno for seasoning 
Sprinkle of Pepper
Salt as per taste

Optional- 2 slices Ham cut into long strips 

Method 
Place bread slices on a baking sheet. Bake until toasted for about 6-8 minutes at 200 degrees in a preheated oven.. Remove and add ham (Optional), tomato and onion. Sprinkle with pepper.
Add mozzarella. Top with seasoning and drizzle with olive oil. Bake for about 8-10 minutes at 200 degrees or till the cheese melts. When done, place crostini on serving plate and serve immediately.




Ciabatta

Ciabatta 

It means slipper bread is an Italian white bread made from wheat flour, water, salt, olive oil and yeast. Ciabatta is somewhat elongated, broad and flat and is baked in many variations.

Ingredients
3 1/2 + 1/2 cups Whole Wheat Flour
2 cups Lukewarm Water
1½ tsp salt
1 1/2 tbsp Dry a Yeast
1 tbsp Olive Oil

Method
Take a mixing bowl. Add in 3 1/2 cups of flour, make a well in the centre. Add yeast and water. Mix the flour with the help of a wooden spoon. The dough will be quite sticky.  Leave the dough covered for 6 hours or over night if possible.  Add salt and 1/2 tbsp oil to the dough and mix it.Add 1/2 cup of flour on the dough and mix the dough for few minutes. Add 1/2 tbsp oil and cover the dough and and let it rest for 2 hours. Sprinkle some more flour, take the dough and divide the dough in to 2 portions. Grease a baking tray. Apply oil on the palms as the dough is a soft dough. Take one portion of the dough flatten and stretch the dough and give it a longish cylindrical shape. Give folds from all the sides. Turn the dough. Then with the help of the knuckles, press it to flatten the dough a bit. Do the same for the other dough. Cover and let the dough to rise for a hour. Preheat the oven to 200 degrees celcius. Bake for 25 to 30 minutes. During baking, spritz loaves with water every 5 to 10 minutes for a crispier crust.They sound hollow when you tap the bread. Cool the bread completely before cutting.

Garlic Cheese Bread

Garlic  Cheese  Bread
Ingredients 
2 cups of All purpose flour
1 1/2 tbsp of Dry yeast
1 tbsp Sugar
Salt to taste
1/2 cup of Luke warm water
1/2 cup Grated cheddar cheese 
1 tbsp Garlic Crushed 
1 tbsp Butter
1 tbsp Oil
Butter + Milk mix for brushing
1 tsp Dry Oregano for sprinkling 

Method 
Take a mixing bowl, add flour and salt. Take Luke warm water, sugar and yeast. Mix it, let it rise. Pour the yeast water in to the flour. Add more water if required to get a soft dough, add 1/2 tsp of oil and knead the dough well adding some more oil in between for 5 minutes. Cover the dough and  let it rise double in size. Sprinkle some flour on the platform, take the dough and knead it again. Divided the dough into 2 portions. Roll out one portion of the dough. Add 1/2 tbsp butter, 1/2 tbsp garlic crushed, spread it on the rolled dough. Sprinkle 1/2 the grated cheese. Fold the dough in to half. Lightly slit the dough into strips. Let it rise for 20 minutes. Brush with milk + butter. Sprinkle with dry oregano seasoning. Bake at 180 degrees for 25 to 30 minutes or till brown in colour in a pre heated oven.  Brush with butter. Cool a bit and then take it out from the tray. 

Buns

Ingredients 

2 1/2 cup All purpose flour 

1 1/2 tbsp Dry Yeast

2 tbsp Sugar 

1 Cup Lukewarm Milk

1 tbsp Melted Butter

Salt to taste

Egg wash / Milk wash + Butter wash

Method

Take a mixing bowl. Add flour and salt. Mix it. Make a well in the centre of the flour. Add sugar, yeast and 1/2 cup lukewarm milk. Stir the yeast, sugar and milk with out disturbing the surrounding flour. Cover and let it rise. After it rises. Start mixing the flour... Add the remaining milk little at a time to make a soft dough. Add 1/4 tbsp melted butter, Knead the dough for 5 minutes adding 1/4 tbsp melted butter in between. Rub some butter on top, cover and keep for rising double in size. Rub some butter on the palms. Sprinkle some flour on the platform, take the dough, punch it and knead it again for sometime. Divide the dough into equal proportions. Grease the baking tray.  Rub some butter on the palms. Take one portion of the dough. Roll the dough giving it a round shape. Place each buns on the baking tray at some distance. Spray with water and cover with soft Malmal cloth till it rises double in size. Brush it with egg wash or milk + butter wash. Bake it in a pre heated oven at 190 degrees celcius for 25 minutes or till brown on top. Optional brush butter on top. Cool the buns a bit and remove it from the tray.

Ingredients
2 cups Whole wheat Flour
1 Egg OR 2 tbsp Curd
1/2 Cup Luke warm Water
1/2 tspYeast
1 tsp Sugar
Salt to taste
1/2 tsp white and black Sesame seeds
1/2 tsp Ghee

Method
Add flour in a mixing bowl. Make a well in the centre. Add yeast and sugar in the centre of the flour. Pour Luke warm water and let the yeast rise. Beat the egg. Keep 1 tsp for brushing the naan. Add the rest of the beaten egg or curd, start mixing to make a soft dough. Add 1/4 tsp ghee, knead the dough for 5 minutes. Cover the dough and leave it to rise. Apply ghee on the palm. Punch the dough, grease the baking tray with oil. Divided the dough in to 2 portion. Take one portion. Sprinkle little flour on the platform. Roll out the dough into 1/2 inch thick  circle. Keep it on the baking tray. Cover and let it rise. Press the dough with fingertips. Brush with egg. Sprinkle with sesame seeds. Bake in pre-heat oven and bake at 180 degrees Celsius for 15 to 20 minutes or till brown on top. Serve with any gravy dish.
