Skillet Eggs with Vegetables

Skillet Eggs with Vegetables
1 large onion chopped
1/4 cup green peas
1/4 cup cauliflower chopped
2 green chilies chopped
1 tbsp chopped coriander leaves or parsley
2 garlic cloves finely chopped
1/2 tsp crushed dried red chilli flakes
Salt to taste
1/2 tsp black pepper
6 large eggs
1 tsp mix herbs
1 tbsp butter
1 tbsp olive oil
1/4 cup cheese grated

Note: You can add any chopped vegetables like broccoli, tomatoes, zucchini, bell pepper, mashrooms....

Heat the oil and butter in a large skillet over medium heat. Add the onion, chillies and garlic. Saute it for some time. Add the remaining vegetables. Cover and cook until the vegetables have become tender. Mix it.
Break the eggs,separating the yolk and the egg whites. Beat the egg while sprinkling some salt and pepper. Spead the egg whites on top of the vegetables. Cover the skillet and cook for few minutes. Then pour in the egg yolks one by one gently so that yolks do not break. Cover the skillet and simmer gently until the yolks are set. Sprinkle salt on top. Add in the grated cheese. Sprinkle the remaining mix herbs, coriander leaves and red chilli flakes. Cover the skillet for a minute till the cheese melts. Serve with home made bread or Pav ...
