Mangsher (Mutton) Ghugni


Mangsher (Mutton) Ghugni  
Ingredients
1 cup boneless Mutton cut in to small cubes
2 cups Dried yellow peas
1 big  Potato cut into small cubes
1 Onion  finely chopped
1 Tomato finely chopped
1 tsp  Ginger Paste
2 tsp Garlic Paste
1 tsp Bengali  Garam Masala powder ( 2 Cardamoms, 2 Cloves, 1 Cinnamon stick, 1/2 tsp cumin seeds and 4 Pepper corn powdered )
1/2 tsp Cumin seeds
1 Bay leaf
1/2 tsp Turmeric Powder
1/2 tsp Red Chili powder
1 tsp Coriander Powder
1 tsp Cumin seed powder
2 tbsp Oil
1/2 tsp Sugar
Salt to taste

For Garnishing
2 tbsp Chopped Onion
1 tbsp Chopped green chilies
2 tbsp Chopped Coriander leaves
Sprinkle Bhaja masla ( Roast 1 tsp of each Cumin seeds, Coriander seeds, 1 Red Dry Chill and powder the spices)
1 tsp Tamarind Water ( Take 1 tsp Tamarind plup, Black salt to taste, 1/2 tsp Bhaja Masala and 1 cup of water. Mix all the ingredients together to make Tamarind water )

Method
Wash the yellow peas and soak it for at least 3 to 4 hours or overnight. Then pressure cook the peas with salt and turmeric powder  then open the lid. The peas should be well cooked. Wash the mutton and cook in a pressure cooker until 3 whistles. Preserve the mutton stock and keep the mutton pieces aside.  In a big pan put 2 tbsp oil, once oil is ready add 1 bay leaf and cumin seeds. Let the cumin seed crackle. Add the chopped onions, saute it. Add ginger and garlic paste. Saute it for some time. Add the potatoes, stir it nicely, until the raw smell goes off. Add  turmeric powder, coriander powder, red chili powder, cumin seed powder, sugar, garam masala powder and salt. Add 2 tbsp of water. Stir it and cook for few minutes. Add the tomato pieces. Cook till the tomato pieces becomes soft. Add the cooked mutton pieces and stir in all the ingredients well. Let it cook for sometimes. Add in the peas and the mutton stock. Cover and let all  the ingredients boil for 10 minutes. Once everything is well cooked adjust the seasonings. The consistency should not be too dry or too runny. Serve it with some chopped onions, some chopped green chilies, chopped coriander leaves , 1 tsp tamarind water and  Bhaja masala.
